Cashew Nut Halwa Recipe / How to make No Sugar Cashew Nut Halwa | முந்திரி பருப்பு அல்வா
Melt-in-your-mouth Cashew Halwa is really tasty. This Cashewnut Halwa is sumptuous sweet since it is very rich. This halwa tastes much better than any other halwa while being comparable to it. It just requires a small number of ingredients and is really simple to produce.
Ingredients to make Cashew Halwa
Cashew nuts - 1 cup
Milk - 1/2 cup
Jaggery Powder - 1 cup
Saffron - 1 tsp
Cardamom Powder - 1 tsp
Method to make Cashew nut Halwa
1. Soak cashew overnight and blend it into a paste.
2. Into a pan add some milk and mix the cashew paste.
3. Add some ghee in between and mix.
4. Add jaggery powder and mix with the mixture.
5. Finally add some saffron and cardamom powder and mix with the mixture.
6. When the mixture becomes thick and not sticking to the pan take it out and add it greased pan.
7. Let it set then demould and cut and serve.

KAJU KATLI
Preparation time 10-15 minutes
Cooking time 15-20 minutes
Serving 2-4
Ingredients
2 cups chilled Cashew nut, powder, काजू
For Sugar Syrup
1/2 cup Water, पानी (3/4 cup max )
¾ cup Sugar, चीनी
½ tsp Cardamom powder, इलायची पाउडर
2 cups prepared cashew powder, काजू
1 tsp Rose water, गुलाब जल
1 tsp Ghee, घी
Few Saffron strands, केसर
For Garnish
Silver vark, चांदी का वर्ख
fresh Rose petals, गुलाब की पंखुड़ियां
Process
In a small mixer jar, add cashews, grind to smooth powder. keep aside.
Now, sieve the ground cashew powder.
For Sugar Syrup
Now in a deep non stick pan, add water, sugar, cardamom powder.
Keep the flame on low and keep on stirring to form syrup.
Stir the sugar syrup till it forms string consistency.
Now, add the sieve cashew powder into the sugar syrup.
Mix it well, add rose water and mix till it starts releasing from the pan.
Once the cashew paste turns to dough, leave the pan and add ghee.
Continue to mix till the ghee melts completely and cashew dough is formed leaving the pan.
Switch off the flame. and grease the butter paper with ghee.
Transfer the cashew dough onto the butter paper.
Grease your hand with little ghee and knead for 30 seconds.
Once you get smooth dough, cover with butter paper.
Take a tray and press to form a uniform layer. Spread some saffron strands.
Then roll the dough with a rolling-pin, adjusting the thickness according to your choice.
Now, cut the dough into diamond shape or the shape you wish for.
Garnish it with silver vark and rose petals.

Thai Inspired Cashew Chicken
Chicken Marinade:
3 chicken breasts (or 4 boneless skinless chicken thighs), cubed in to 1 inch pieces
1 tsp sesame oil
1 tbsp soy sauce
2 tbsp corn starch
1 tsp black pepper
1 tsp salt
Sauce Ingredients:
¾ cup chicken broth, low sodium
3 garlic cloves, minced
2 tsp ginger paste
1 tsp chili garlic paste
2 tbsp hoisin sauce
2 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tsp sesame oil
1 tbsp brown sugar
2 tsp corn starch
½ tsp salt
1 cup unsalted cashews
1 tbsp vegetable oil, divided
2 bell peppers, chopped
1 onion, chopped
Green onions for garnish
Cooked white rice
????Marinate chicken with the marinade ingredients above for 30 mins
????In a measuring cup, add all the sauce ingredients, and whisk well
????In a large pan or wok, add ½ tbsp vegetable oil, sauté cashews for 1 minute on high heat until golden, scoop out, and set aside
????Drizzle another ½ tbsp vegetable oil, add in chopped peppers and onion, and sauté on high heat for 1-2 mins, until a bit tender but still crunchy, scoop out, and set aside
????Add in chicken, cook in batches to create a sear
????Once chicken is fully cooked, whisk sauce, and pour it over the chicken. Add in vegetables and cashews immediately
????Lower heat, mix everything through and cook for one more minute, and serve over rice
