How To make Brandy Cheese Ball
Ingredients

oz
blue cheese, soft, crumbled
8
oz
cream cheese, softened
2
tablespoon
parsley, fresh, chopped
2
tablespoon
brandy or cognac
1
each
garlic clove, finely chopped
1/3
cup
sesame seed, toasted
Directions:
Beat blue cheese, cream cheese, parsley, brandy and garlic in small bowl on low speed until smooth. Cover and refrigerate about 6 hours or until firm. Just before serving, shape cheese mixture into a ball and roll in sesame seed. Garnish with chopped parsley if desired.

GUAVA DUFF WITH BRANDY SAUCE | BAHAMIAN COOKING
Ingredients:
Dough
3 cups flour (All-purpose)
1/3 cup sugar
1 lg. egg
1/4 tsp. salt
1/3 cup baking powder
1/2 cup evaporated milk
1/2 cup water
Guava shell (cut up)
*Mix well and form a log. Wrap in a cloth and allow to boil in water covered for an hour.
Sauce (everything should be room temperature)
1 8oz block unsalted butter
5 eggs
1 tbsp. vanilla extract
2 tbsp. Bandy
1/6 sugar
1 tin sweetened condensed milk
1/4 cup powered sugar
* mixing should be completed when the duff/dough is finished. Afterwards, serve over the warm duff/dough. Enjoy.

INGREDIENTS
1 piece of brie cheese. You may also use camembert cheese.
1 large pear, small diced.
2 tbsp. butter
fresh rosemary, chopped
1 oz. brandy.
2 to 3 tbsp. balsamic vinegar.
1 tbsp. raw honey
salt and pepper to taste
INSTRUCTIONS
1.- Melt butter over medium heat until it'is golden brown, then add pears and allow to cook for 3 minutes. Add brandy, rosemary, salt and pepper. Remove from heat. Reserve for later.
2.- In the same pan add balsamic vinegar and honey. Simmer. Be careful with it because it burns really fast. Remove from heat.
3.- Cut brie in half. Top the bottom half with the pear mix, then place the top layer and repeat. Finish with the sauce all over the cheese and garnish with more fresh rosemary.

Otherwise, the name says it all - blue cheese and cream cheese balled up with dried cranberries and rolled in crushed candied pecans. There's something about cheese balls that can make it a party! Chocolate ganache filling
220g dark / milk chocolate
120g heavy cream
1 tbsp instant coffee
30ml rum / whiskey (if you don't use alcohol, use 30ml heavy cream instead)
For Coating (4 types of truffles)
150g dark chocolate
15g vegetable oil
100g white chocolate
10g vegetable oil
about 1 - 2 tbsp cocoa powder
about 30g - 40g chopped hazelnuts
