Macros 1 Burrito (out of 5): 407 calories, 39C; 16F, 28P
5 tortillas 18cm/7inch
250g deli meat
500g potatoes
5 eggs
75g mozzarella cheese
2 onions
Sauce:
200g skyr
10g basil
10g mint
10g vinegar
10g mustard
15g oil
1 clove garlic
salt, pepper
Peel potatoes and then cut them into small cubes. Put them into a microwave-safe container and microwave for 5 minutes.
In the meantime crack 5 eggs into a bowl and whisk with a fork. Dice the onions and cut the ham into smaller chunks.
Add 10g of oil to a pan on medium heat and add in the microwaved potatoes and a pinch of salt. Fry them, stirring occasionally for 5-7 minutes. Then add another 5g of oil and add in onions and deli meat. Keep frying for another 6 minutes. Now add in optional spices. I used 1 tsp of cumin and 11/2 tsp cayenne pepper and toast the spices for 30 seconds.
Now go in with the eggs and cook them for 1 minute stirring constantly. Transfer everything into 2 plates and let them cool down until they don't steam anymore about 10 minutes.
In the meantime add all sauce ingredients into a blender and mix it for 1 minute. Transfer the sauce to a squeeze bottle. The sauce lasts in the fridge for up to a week.
Prep 5 tortillas, and distribute egg and potatoes evenly on all 5. Add 5g of sauce on top of every tortilla and add 15g of cheese. Roll the tortillas into a burrito shape, wrap them in a paper towel, and put them into a zip log back and then into the freezer.
If you want to eat them put them straight from the freezer in the microwave for 3-5 minutes or 15-20 minutes in the oven. Done!

This Breakfast Burrito is SO GOOD, It's the BEST breakfast ever!
This breakfast burrito was really created by my son the burrito fanatic. It has eggs, onions, bell peppers, cheddar cheese, bacon, and an unusual ingredient. He always seems to come up with some great burrito variations and this one doesn't disappoint! Another one of his great ideas is my burrito pie. Check that out also, it's not to be missed.

Breakfast Burrito Recipe

Makes 2 breakfast burritos
4 eggs
4 slices bacon, no nitrates
Large handful or about 1 cup of grated cheddar cheese
2 cups of french fries, frozen and cooked per package instructions
1 bell pepper, super fine dice
½ yellow onion, super fine dice
Frank’s Red Hot Sauce, or sriracha sauce
Sour cream
½ tsp. Salt
½ tsp. Garlic powder
Flour tortillas or gluten free tortillas
Directions:
Prepare and cook the french fries as per package instructions. Then cook the bacon by placing into a frying pan over medium heat. Turn frequently until crispy and then remove to a paper towel covered plate to drain.
Chop the bacon into bite size pieces and set aside.
Drain out the bacon grease except 1 Tbsp and cook the onion and bell pepper for 4 minutes stirring frequently.
Add the scrambled eggs to the pan and add the cheese, salt and garlic powder and cook to your desired doneness.
Heat the tortillas in a tortilla oven in the microwave for 40 seconds on high heat.
Make the burritos by placing the egg filling down the center of the burrito and topping with ½ the bacon bits, a handful of french fries, a few shakes of Franks Hot sauce and some dollups of sour cream.
Fold the edges up first and then roll your burrito. Enjoy!

Simple Breakfast Burrito Recipe
Breakfast Burritos are a nice blend of Breakfast and Tex-Mex cuisine. I generally like to keep mine pretty simple with just some potato, egg, sausage, salsa, and a little cheese all wrapped up in a large burrito sized tortilla.
Ingredients
1 Burrito Sized Tortilla (10-12 inches)
2 Large Eggs
2 ounces Breakfast Sausage
Hash Browns (I used 12 mini tater tot style hash browns)
1/2 Cup Fresh Salsa
Shredded Cheese
Black Pepper (To Season Hash Browns, and Eggs)
Garlic or Onion Powder (To season Hash Browns)
Instructions
1. Cook using a Griddle or a Large Skillet over Medium Low heat and a Spatula
2. Start by spreading some butter and putting your hash browns down
3. Season hash browns with ground pepper and garlic powder then place a small lid on top to help them cook quicker
4. Put down your sausage and start breaking it up
5. Cook sausage fully and let it get a little browned
6. Once cooked and browned move your sausage out of the way to make room for your eggs
7. Flip your hash browns and ensure they're not burning
8. Spread a little butter for your eggs
9. Crack both eggs onto your cooking surface and season with pepper
10. Scramble your eggs and flip until they are half cooked, they should still be runny
11. Add salsa on top your eggs and let it sit
12. Pull of your cooked hash browns and arrange into two rows on your tortilla
13. Sprinkle a little cheese on top the hash browns
14. Scramble the eggs, salsa, and sausage together
15. Keep scrambling and allow for some of the liquid from the salsa to cook off
16. Pull your egg, sausage, salsa, scramble off and put it on top of your hash browns
17. Top with remaining cheese and serve
18. Enjoy
