Makes - 5 Burritos
Ingredients -
2 tsp (10ml) - Olive Oil
3 - All-Rounder Potatoes, Finely Diced
4 - Chorizo Sausages, Diced
10 - Whole Eggs
100g (3.5oz) - Cheddar Cheese, Freshly Grated
1 - Avocado, Thinly Sliced
5 - Soft Tortillas
Seasoning To Taste
Sauce Of Choice To Serve

Breakfast mornings are made more filling with these homemade burritos! It is packed with Italian sausages and eggs mixed with a variety of spices for that much-needed kick to start your day. Serve it with some salsa to complete the meal and enjoy!

Ingredients:
12 pcs tortillas, 8-inch
Burrito Filling:
1 lb Italian sausage, removed from casing
1 tbsp chili powder
1 tsp ground cumin
1 tbsp paprika
¼ cup skim milk
6 eggs
2 tbsp unsalted butter
Salsa:
10 oz tomatoes, fresh and chopped
¼ cup cilantro, chopped
½ cup yellow onion, peeled and chopped
½ cup fresh lemon, juice
Salt and ground black pepper to taste
To serve:
Sour cream
⬇️ How to make Breakfast Burritos ⬇️
0:09 In a large skillet over medium heat, sauté sausage with chili powder, cumin, and paprika until browned. Set aside.
0:40 In a mixing bowl, whisk and combine milk and eggs together.
0:56 In a large skillet, melt the butter over medium heat and saute eggs until scrambled. Add into your sausage mixture and toss to combine.
1:20 Adjust seasoning with salt and pepper to taste.
1:36 Combine all ingredients for the salsa then set aside.
2:16 Place roughly 2 tablespoons of egg and sausage mixture per tortilla shells and roll like a burrito.
2:39 Add salsa on top and serve with roughly ¼ cup of sour cream and extra salsa per serving.

Southwestern Breakfast Burritos
What could be heartier for breakfast than this southwestern breakfast burrito?! It's chocked full of chorizo, eggs, homemade black beans, and topped with onion, cheese, and cilantro. Yum!

INGREDIENTS
- 1/2 pound dried black beans
- 7 cups water, separated
- 1 tablespoon kosher salt
- 1 teaspoon cumin
- 3/4 teaspoon chili powder
- 3 bay leaves
- 3 garlic cloves, husk removed and smashed
- 1/2 onion
- 1 pound ground chorizo
- 1 jalapeño, seeds removed and minced
- 2 tablespoons butter
- 7 eggs
- 2 tablespoons sour cream
- 2 teaspoons salt, separated
- 1/2 teaspoon pepper
- 4 ounces Monterey Jack cheese, shredded
- 1/2 cup diced onion
- 8 extra-large tortillas
INSTRUCTIONS
FOR THE BLACK BEANS
In a 6-quart kettle, combine the beans, 3 cups water, and 1 tablespoon salt. Cover and refrigerate at least 8 hours.
Once soaking is complete, drain and rinse the beans. Add the beans back to the kettle. Pour in 4 cups water, cumin, chili powder, 1 teaspoon salt, garlic cloves, onion, and bay leaves.
Bring to a boil and then reduce to a simmer. Cook until the beans are tender, 60-90 minutes.
FOR THE CHORIZO AND EGGS
Heat a 10-inch skillet over medium-high heat. Add the chorizo and cook, breaking up any large pieces. Continue cooking until browned and cooked through, 8-12 minutes. Remove the chorizo.
Saute the prepared jalapeño in the oil left from the chorizo, 2 minutes.
In a bowl, whisk the eggs, sour cream, salt, and pepper until smooth. Pour the eggs into the skillet with the jalapeño. Cook over low heat until they are just set but still moist, 4-5 minutes.
Remove from the heat and assemble the burritos.
FOR THE BURRITOS
Working with one tortilla, add 1/3 cup cooked black beans as a base layer. Top with eggs, chorizo, cheese, onion, and cilantro. Bring the sides in and tightly roll the burrito up.
To sear, heat a skillet over medium-high with 1 tablespoon oil. Add folded burrito to the skillet and cook until brown, 1 minute. Turn and repeat, then remove from skillet and serve. Continue until all burritos are made.

▪1lb/.5kg Frozen tater tots
▪1lb/.5kg thick cut bacon, cut into bite size pieces
▪230g/1c water
▪1 15oz/440g can pinto beans, drained
▪1 16oz/450g can refried pinto beans
▪Salt
▪Black pepper
▪2-3g or 1t cumin
▪1 lime
▪10 large eggs
▪125g or 1/2c heavy cream
▪Spicy chipotle ranch (recipe below)
▪Large 10”/25cm tortillas
▪Oaxaca cheese, grated (sub with chihuahua or pepper jack)
▪Smashed avocado (roughly combine 2 avos with pinch of salt and squeeze of lime)
▪Cilantro, chopped
▪Cotija cheese
TOMATILLO SALSA
▪100g or 4 small-med jalapeno, chopped
▪10g or 3-4 cloves garlic, chopped
▪100g or 1 small white onion, chopped
▪400g or 4-6 whole ripe tomatillos, chopped
▪400g or 1 2/3c water
▪10g or a handful of cilantro
▪Large pinch of salt
