If you want to make a great delicious and easy recipe that your family will love, then try this Chicken broccoli and ziti recipe. It’s one of those dishes that's super simple to throw together and packs a ton of flavor without much fuss. Traditionally some people use cream or milk to thicken the sauce and give it a creamy texture. In this version of chicken broccoli and ziti I omit the cream and it turns out great and without the lactose! When using pasta with any type of tomato or light sauces, I recommend any type of pasta with holes and lines as these are great places to help trap the sauce and flavors the dish without over you having to seasoning it. Ingredients List:
Makes 3-4 Servings
1-2 Boneless Skinless Chicken Breasts
1-2 Cups Fresh Broccoli Spears
6-8 oz Ziti or Rigatoni (Preferably with Lines)
3-4 Garlic Cloves Finely Chopped
2 tbsp Fresh Parsley Chopped
1/2 Cup Chicken Broth (Low Sodium)
2 tbsp Basil
1/4 Cup White Wine (Optional)
2 tbsp unsalted Butter
Olive Oil
Salt
Black Pepper
Parmigiano Grated Cheese

Chicken Alfredo Bake
375° 13 x 9 baking dish
1 lb Penne - cooked & drained
3 C Chicken - diced & browned or you can use a shredded rotisserie
6 Tbsp Butter
4 Tbsp Flour
2 tsp Garlic - minced
1 C Heavy Cream
3 - 4 C Milk
Salt & Pepper to taste
3/4 C Parmesan Cheese - grated
2 C Mozzarella Cheese - shredded
1 Tbsp Parsley - chopped
Cook pasta and set aside
In large saucepan melt butter, add garlic and cook 1 - 2 minutes. Whisk in flour and cook 2 - 3 minutes. Pour in heavy cream, whisking constantly until thickened, add 3 cups of milk and stir until thickened add salt and pepper to taste. Add parmesan cheese, mix well. If you need to thin out the sauce add more milk.
Pour sauce over pasta and add chicken and 1 cup of mozzarella cheese, toss until well mixed.
Pour into 13 x 9 baking dish and top with remaining cheese.
Bake 20 minutes or until bubbly. Top with chopped parsley.

Creamy Chicken and Broccoli (Low-carb / Keto)
????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

1½ pounds of broccoli, washed and cut into bite size pieces
Salt
¼ cup extra virgin olive oil
4 garlic cloves, chopped
¼ teaspoon hot pepper flakes to taste
1 pound of pasta of your choice
¼ teaspoon black pepper or to taste
½ - 1 cup grated Pecorino Romano Cheese

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?

A throw-it-all-in-the-pan weeknight meal that's ready in 30 mins! | One-pot chicken & broccoli pasta
Easy one-pot pasta dinners are my favourite on busy weeknights.
I'm a bit of a creamy-cheesy sauce addict when it comes to sauces, but this is a lighter version that uses just a little Parmesan and some milk, rather than lots of heavy cream.
It means this One-pot chicken & broccoli pasta feels nice and light, but still with plenty of flavour.

Ingredients:
2 tbsp olive oil
1 small onion peeled and chopped
3 cloves of garlic peeled and crushed
3 chicken breasts (this is about 525g/18.5oz), chopped into bite-size chunks
1/4 tsp salt
1/4 tsp black pepper
60 ml (¼ cup) white wine (optional – you can replace with water or stock)
600 ml (2 ½ cups) good quality chicken stock
180 ml (¾ cup) whole (full-fat) milk
300 g (10.5oz) dried pasta shapes
300 g 10.5oz) broccoli stalk removed, chopped into small florets
1 tsp lemon juice
50 g (½ packed cup) grated parmesan
To Serve:
Freshly chopped parsley
black pepper
Instructions
1. Heat the oil in a large frying pan (skillet) on a medium-high heat.
2. Add the chopped onion, chicken, salt and pepper and fry for 5-6 minutes, until the onions start to go translucent.
3. Add in the garlic, stir and cook for 30 seconds.
4. Add the wine and bring to the boil. Simmer for 1-2 minutes, then add the stock and milk.
5. Bring to the boil, then stir in the pasta. Bring back to a gentle bubble and place a lid on the pan. Turn down the heat and cook for 10 minutes.
6. Add in broccoli, stir, place the lid back on and cook for another 5 minutes, until the broccoli is tender, and the pasta is cooked.
7. Remove the lid, stir in the lemon juice and parmesan.
8. Serve, topped with a sprinkling of fresh parsley and black pepper.
