Beef Hotpot Recipe:
2 onions
3 carrots
120g frozen peas
480ml beef stock
1 teaspoon thyme
dash balsamic vinegar
1kg potatoes thinly sliced
500g 5% lean Mince
2 tablespoons tomato puree
Pigs in blanket Toad in the hole (per person / made individually):
2 sausages
2 slices lean back bacon
35g self raising flour
2 eggs
50ml semi skimmed milk
Fry Light
Chicken Faijatas (serves 4):
800g Chicken sliced
3 Mixed peppers sliced
4 Onions sliced

Courgette fritters recipe:
Carbonara (serves 4):
300g pasta of your choice
2 eggs
200g parmesan cheese
6 tablespoons quark
8 bacon rashers

COOK WITH ME: BEEF & BROCCOLI - FAMILY RECIPE & MEAL IDEA
Hi everyone! I am sorry this is a bit later than normal. Apparently technical difficulties are my thing at the moment, as my computer crashed earlier and I lost this edit and had to redo it! What fun! But we got there in the end! I hope you enjoy this one. And thank you so much for your support over my Instagram drama over the last few days. I was very touched and it meant a lot at a time where I was feeling quite stressed and a bit lost. So thank you again. Xxx
INGREDIENTS:
Two sirloin steaks - not cheap, as we know, but managed to stretch it out between the five of us.
Brocolli - we used two heads
Spring onions - we used five thinly sliced
Beef Marinade:
Mix together the following with your thinly sliced beef (don’t forget to stick it in the freezer for half an hour or so first, to make it easier to cut!)
2tbsp of cornflour
Lots of cracked black pepper
4tbsp of oyster sauce
A pinch of baking soda
1tsp of vegetable oil
Sauce:
In a jug add:
A cup of oyster sauce
⅓ cup of soy sauce (amended as I felt it could be tiny bit less salty - also try and go for low sodium soy sauce with kids, especially if they are younger!)
⅓ cup of ketchup
4 cloves of crushed garlic
Lots of cracked black pepper
Optional - 1tsp of ginger paste
METHOD:
Marinate your beef for at least 20 minutes before cooking. And mix together the sauce ingredients.
In a very hot wok, or large pan, add some neutral oil (like vegetable or sunflower oil) and then add your marinated beef to cook. It won’t take long and you just want to brown on all sides. You want a good sizzle when you add it!
Blanch your broccoli in some boiling water for about a minute, and then add to the pan and stir fry for a minute or two. Add in your sauce and continue to cook for a further minute or two, before adding in your spring onions. You can reserve a few for garnish if you like! Then just give it a final stir through and serve up!
We served with rice and spring rolls!

Creamy Broccoli Cauliflower Salad

⭐️ INGREDIENTS
1 small broccoli, about ¾ pound or 340 grams
1 small cauliflower, about ¾ pound or 340 grams
1 small red onion finely chopped
¾ cup sun-dried tomatoes drained from the oil and chopped
½ cup dried cranberries
¼ cup almonds toasted and chopped
2 tablespoons sunflower seeds
FOR THE DRESSING
½ cup vegan mayo or your favorite mayo
½ cup Greek-style yogurt
2 tablespoons apple cider vinegar
1 tablespoon sugar or maple syrup
¾ teaspoon salt

2 heads (680 grams) broccoli about 1½ pounds; cut into small florets and stem chopped into small pieces

½ cup (50 grams) dried cranberries
¼ cup (35 grams) almonds chopped and toasted
¼ cup (35 grams) seeds sunflower or pumpkin; toasted
½ cup (70 grams) sun-dried tomatoes in oil optional; chopped
