How To make Brochettes Of Lamb
2 lb Boneless leg of lamb,
- cut into large cubes 2 Onions; cut into squares
1 tb Chopped fresh rosemary
1 tb Chopped fresh tarragon
1 tb Chopped fresh parsley
Salt, pepper Thread lamb cubes onto metal skewers alternately with onion squares. Place brochettes in wide, shallow pan and sprinkle all over with rosemary, tarragon and parsley and season to taste with salt and pepper. How to make Sichuan Style Lamb skewers-Spicy and juice (Vertical Video)
One of my favorite summer grilling:) Hot and spicy Sichuan Style
Sichuan Style Lamb Skewers
Ingredients:
1 pound (450 grams) lamb meat (lean cut with a small chunk of lamb fat)
2 tbsp chopped garlic
2 tbsp cooking oil (I use Canola oil)
2 tsp Chili powder ( best to use Sichuan red chili powder)
1/2 tsp Sichuan peppercorn powder
2 tsp Cumin powder and extra for grilling
1/2 tsp salt
2 tbsp aged soy sauce
Marinade the lamb with all the ingredients over night( is the best) or 20-30 minutes. Flip frequently until the lamb turns dark brown on all surfaces. Dab more chili power, Sichuan pepper corn powder and cumin powder while grilling, (or you can skip the chili powder if you don’t want the lamb to be too spicy). Grill until the meat is cooked through.

In Morocco, ground meat is very popular (especially during Eid) and it is either cooked in a sauce or grilled. We are going to grill it, but we are going to add two ingredients that are going to make the flavors pop: chopped mint leaves and freshly grated nutmeg!

BBQ Lamb Skewers
Ingredients/Utensils
• Lamb shoulder chops (preferably fresh – preferably New Zealand Spring Lamb) (only use shoulder chops – they are best as you need that extra fat)
• Salt to taste
• Wood (or metal) skewers
• Paper towels
Note: 1 lamb shoulder chop, will make 3 – 4 skewers
Directions
• Preheat the BBQ on high
• Soak wood skewers in water (5 mins)
• Scrap the top and bottom of the lamb chops with the back side of a knife (or use a butter knife) to remove any residue
• Dry each lamb chop with paper towel
• Cut lamb into thin strips, about ¾ inch thick and then cut into 3/4 “squares.
• Thread lamb pieces onto skewers, so that they are just touching, but not packed tight
• Generously salt the lamb to taste, on both front and back sides
• Place on BBQ and with lid open, grill for ~4 mins
• After ~4 mins, turn skewers over, and cook the other side for ~4 mins, again, with lid open (note: lamb needs to be well done)
• Remove and serve right away – must be eaten hot
• Enjoy!
