This is my version of the Buttermilk Spice Cake from A Splash of Vanilla.
BTW, the cake was a hit at game night! The next few days it did dry out a bit, so I'd suggest keeping leftovers in an airtight container.

???? Buttermilk Ginger Spice Cake Recipe
This Buttermilk Ginger Spice Cake Recipe is perfect for weeknight snacking! It's an easy, tasty spice cake recipe that you serve right from the pan. The cinnamon butterscotch topping puts this sheet cake into category of it's own.
Ingredients:
Cake Ingredients:
115g (4 ounces) butter
425g (15 ounces) brown sugar
2 large eggs
500 mL (2 cups) buttermilk
10 mL (2 tsp) pure vanilla extract
10 mL (2 tsp) baking soda
360g (13 ounces) all-purpose flour
5 mL (1 tsp) cinnamon
2 mL (½ tsp) ginger
2 mL (½ tsp) nutmeg
Topping Ingredients:
85g (3 ounces) melted butter
200g (7 ounces) brown sugar
5 mL (1 tsp) cinnamon
60 mL (¼ cup) milk
80g (3 ounces) diced pecans or walnuts
Method:
Preheat the oven to 350°F. (180ºC)
Grease a 9 x 13 cake dish.
Cream the butter and brown sugar together.
Add the eggs, one at a time beating until smooth.
Stir in the buttermilk and vanilla extract.
Whisk together the dry ingredients; then mix into the wet ingredients
until combined.
Scrape the batter into the greased dish.
Bake the cake for 45 minutes, or until a cake tester comes out clean.
Remove from oven and cool on a rack in the pan.
Let the cake cool at least a little before serving - serve directly from the dish.
Optional:
While the cake is baking, prepare the topping - if you want it.
Stir together the butter, sugar, and cinnamon.
Stir in the milk.
At the 45 minute mark spread the topping and nuts on the baked cake.
Return to the oven for 15 more minutes.

Spiced Apple Cake

Ingredients
Apples:
Unsalted butter, for buttering the baking pan
6 small Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
Cake:
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar
Directions
For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.
Cook’s Note
For a twist on a classic topping, beat 2 tablespoons store-bought salted caramel with 1/2 cup heavy whipping cream until soft peaks form. Serve dolloped on top.

Spice Cake with White Cake Mix
Spice cake with white cake mix and cream cheese frosting is easy and delicious. By adding spices to a regular box mix, you can create one of the best fall and Thanksgiving dessert recipes.
This recipe started as a cookie recipe. About two years ago, I divided a box of white cake mix into four equal parts and then added mix-ins in order to create different flavors. I had already made lemon, chocolate, and red velvet, and then the idea came to me to make spice cake cookies. I rummaged through my spice cabinet to see what I had on hand, and even though I did not allspice or cloves, I did have cinnamon, nutmeg, and ginger. Not really sure what to expect, I sprinkled in what I thought was probably about 1/4-1/2 teaspoon of each spice, curious as to how the cookies would turn out. I ended up really liking them, especially with a simple sugar glaze. So, when the thought came to me this fall to do an easy spice cake recipe video, I thought back to my cookies: instead of doing a traditional spice cake with four or five spices and brown sugar, I decided to use the spice cake cookie recipe that I had invented for Christmas.
Like I just said, most traditional spice cake recipes call for a lot of spices, usually cinnamon, nutmeg, ginger, allspice, and cloves, along with brown sugar for the extra bit of flavor from the molasses. Although I am sure the classic recipe is great, sometimes I think that combining fewer flavors is better because then you can focus your attention on a few tastes. Since just a few flavors do not have to compete for your palate's attention, you can enjoy them to the fullest extent.????????????
