How To make Caramel Apple Cheesecake2
CRUST:
1 1/2 c Graham cracker crumbs
1/4 c Sugar
1/4 c Butter or margarine, melted
FILLING:
1 lb Caramels
1 cn Evaporated milk
1 c Pecans
16 oz Cream cheese,softened
1/2 c Sugar
2 Eggs
1 1/2 c Golden delicious apples,chop
1 tb Flour
1/2 ts Cinnamon
Preheat oven of 350 F. Combine graham cracker crumgs. 1/4 cup sugar and butter, press onto sides and bottom
of a 9" springform pan. Unwrap caramels; place in a 2-qt heavy saucepan. Add evaporated milk. Melt
caramels over low heat, stirring until smooth. reserve 1/2 cup melted caramel mixture. Pour remaining caramel
mixture over crust in pan. Sprinkle half of the chopped pecans over caramel in crust. Beat cream cheee and 1/2 cup sugar until smooth. Add eggs, one at a time, beating until smooth after each addition. Toss together 1 cup chopped apple, flour and cinnamon, fold into cream cheese mixutre. Spoon cream cheese mixture over caramel crust. Bake 40 minutes. Combine reserved caramel and remaining 1/2 cup chopped apples. Spread over cheesecake, sprinkle with remaining pecans. Continue baking 15 minutes. Loosen cake from rim of pan. Chill before serving. Refrigerate unused portion. Makes 12 servings!!!

Ingredients for making an apple skillet cake recipe:
4 tbsp + 1/2 cup + 3/4 cup unsalted butter
2 large baking apples, peeled, cored and diced into 1/2-inch pieces
(Honeycrisp, Gala, Granny Smith or Braeburn will all work)
1/2 cup + 1 1/3 cup dark brown sugar
3/4 tsp salt
1 2/3 flour
3/4 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
3 eggs
3 cups powdered sugar
7oz melted soft caramel candies
2 tbsp heavy cream
1 1/2 tsp vanilla
Flaky sea salt
Instructions for making an apple skillet cake with salted caramel frosting:
- First in a pan on the stove add your unsalted butter
- Then add in your diced baking apples, honeycrisp for us
- Now add in your dark brown sugar
- And season lightly with your salt
- Now mix everything together
- In a large bowl add your flour
- Followed by your baking powder
- Season lightly with some salt
- And add in your cinnamon
- Also add in your nutmeg
- Then add in your ground cloves
- Now mix everything together
- In a separate large bowl add your unsalted butter
- Then add in your dark brown sugar
- Now combine everything together thoroughly
- Add in your eggs one at a time
- Now pour in your flour mixture
- And mix everything together
- Now pour in your apples mixture
- And again mix everything together
- Now pour the mixture into your cast iron skillet
- Flatten out the mixture in the skillet
- Bake at 350F for 30-35 minutes
- In a small bowl add some unsalted butter
- Now sift your powdered sugar into the bowl
- And mix everything together
- And add in your melted soft caramel candies
- Mix everything together
- Now add in the rest of your cinnamon
- And add in your heavy cream
- Now add in your vanilla
- And mix everything together making a frosting
- Now spread your frosting onto the top of the cake
- And sprinkle on your flaky sea salt
- Your apple skillet cake with salted caramel frosting is now ready to serve

This Apple Crumble Cheesecake has all the delicious flavours and textures of both an apple crumble, and a cheesecake! It has a cinnamon spiced biscuit base, a creamy vanilla cheesecake filling, soft cooked apples laced with spices, and a crunchy crumble topping. It's a delightful dessert for Autumn and it's no bake too!

Mini Apple Pie Cheesecakes!
Ingredients: (Makes 16-18!)
Crust:
1/4 cup brown sugar
1 cup graham cracker crumbs
3/4 cup rolled oats
1/2 cup, 1 stick butter, melted
Cheesecake:
2- 8 oz. packages of cream cheese, softened
2 tbsp corn starch
1/4 cup brown sugar
1/4 cup granulated sugar
2 tsp vanilla extract
1/2 tsp cinnamon
Crisp Topping:
2 tbsp butter, melted
1/4 cup all purpose flour
1/4 cup rolled oats
1/4 cup brown sugar
1/2 tsp cinnamon
2 large or medium apples or 3 small apples skinned, cored, and finely chopped
caramel sauce or ice cream, optional
Directions:
1. Preheat the oven to 350 degrees and line your muffin tins with cupcake liners.
2. Combine the graham cracker crumbs, brown sugar, melted butter, and rolled oats and stir to combine.
3. Divide that evenly into your muffin tins and press down with either your fingers or a spoon and bake for 5 minutes.
4. In a large bowl combine the cream cheese, both sugars, corn starch, vanilla, and cinnamon with an electric mixer until smooth and combined.
5. Divide the mixture on top of each of your crusts and smooth out with a spoon.
6. Divide the apples op top of the cheesecake layer.
7. Make the crisp topping by mixed all the ingredients together until combined and then sprinkle it on top of the apple layer.
8. Bake 25-30 minutes.
9. Cool 15 minutes and put into the refrigerator over night or at least 3 hours.
10. Top with ice cream or caramel or just eat them plain! They are that good!!!
