How To make Caramel Apple Cookies
CLASSIC PILLSBURY COOKBOOKS:
COOKIES, BARS AND brOWNIES:
3/4 c Confectioners sugar
2/3 c Butter or margarine;softened
1 tb Frozen apple juice concentra
-thawed 1 1/2 c All purpose flour
1/4 ts Salt
36 Flat toothpicks
30 Caramels; unwrapped
2 tb Frozen apple juice concentra
-thawed 2 tb Water
3/4 c Finely chopped walnuts
Heat oven to 350 F. In large bowl, beat confectioners sugar, margarine and 1 tb apple juice concentrate until light and fluffy. Light spoon flour into measuring cup; level off. Add flour and salt; mix well. Shape dough into 3/4-inch balls. Place 1-inch apart on ungreased cookie sheets. Bake at 350 F for 12-17 minutes or until edges are light golden brown. Immediately insert toothpick in center of each cookie. Cool completely on wire racks. Line cookie sheet with waxed paper. In heavy 1-quart suacepan over low heat, melt caramels with 2 tb apple juice concentrate and water, stirring frequently until caramels are melted and mixture is smooth (see note) Place walnuts on plate. Spoon caramel mixture over each cookie, letting excess drip off. Press bottom of cookie in walnuts. Place on waxed paper-lined cookie sheet. If caramel mixture becomes too thick, stir in additional water 1/4 ts at a time. 3 dozen cookies TIP: To melt caramel mixture in microwave, in 4-cup microwave-safe measuring cup, combine caramels, apple juice and water. Microwave on HIGH for 3-4 minutes or until caramels are melted, stirring every minute -----

These apple pie cookies are stuffed with delicious home made apple pie filling and caramel, then surrounded by flakey pie crust. These mini pies are absolutely additive, although I’m still not sure if they should be called mini pies, cookies or hand pies…
These mini apple pies are an autumn favorite of mine. I love the way this lattice looks and the taste! I can’t explain how delicious they are and a huge part of that is the home made caramel. Each bite has the perfect combination of apple, caramel and flakey crunch.
A FEW NOTES
*The recipe makes a lot of filling. You can repurpose the leftovers into extra for topping pancakes, ice cream, or snacking.
*It’s easiest to assemble the cookies on the prepared baking sheet as they can be difficult to transfer.
*If you’re short on time you can use frozen pastry dough; pre-made caramel and/or even store bought pie filling. That said, all the components are easy to make and you will DEFINITELY taste the difference if you take the time to make these from scratch.
Caramel Apple Cookies | Simple & Delicious Fall Recipe | Crowd Pleasing Cookies!
Caramel Apple Cookies
1 pouch (17.5 oz) of sugar cookie mix
1 cup of caramel bits
½ cup of chopped dried apple
1 tablespoon of apple cider instant drink mix
1 teaspoon ground cinnamon
1 stick of unsalted butter, softened
1 egg, room temperature
Pre-heat oven to 350°F.
In large bowl, combine cookie mix, softened butter, egg, apple cider drink mix and cinnamon. Stir in apple pieces and caramel bits. Shape dough into 1-inch balls. Place 1 inch apart on parchment lined cookie sheets OR shape into balls and then flatten.
Bake 10 to 13 minutes or until edges are set and light golden brown. BE CAREFUL NOT TO OVERBAKE. Let cookies cool for a few minutes before removing them from the cookie sheet. Store in airtight container.
*** If your cookies get too hard, place them in an airtight container with a slice of bread overnight. They will be softer in the morning. ***

Browned Butter Sugar Cookie Caramel Apple Cobbler
One taste, and you’ll know: The few minutes it takes to turn regular butter into browned butter is time well spent. The nutty flavor it adds to regular sugar cookies pairs perfectly with the rich caramel and tart green apples in this tricked-out version of fall’s most classic dessert.

Caramel Apple Cookie Recipe
Ingredients:
2 sticks unsalted butter, softened
1/2 cup granulated sugar
1 cup brown sugar
2 tsp vanilla
2 large eggs
2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 cup green apple, finely chopped
1/2 cup caramel bits
extra caramel for swirling on top
Directions:
1. Cream together the softened butter, sugars, and vanilla extract.
2. Add the eggs and continue whisking until lightened in color.
3. Fold in the sifted flour, baking soda, salt, and cinnamon.
4. Add the chopped apple and caramel bits, mixing until well combined.
5. Scoop onto a lined baking tray and sprinkle with cinnamon sugar. Bake in a preheated oven at 350F for 12-15 minutes.
6. Once cool, pipe a swirl of caramel on top of each cookie.
