CARROT CASSEROLE
1/2 cup salted butter 1/2 cup chopped onion 1/4 cup all purpose flour 1 teaspoon dry ground mustard 1 teaspoon salt 1/2 teaspoon pepper 2 cups milk 1 cup shredded sharp Cheddar Cheese 12 carrots, peeled and sliced in 1/2 inch slices 1 cup bread cubes 1 Tablespoon melted butter
LETS MAKE IT-
Preheat oven to 350F. Spray a 9x13 baking dish with non stick spray. Steam or boil the carrots will just fork tender, about 8 minutes. Drain and add to the prepared baking dish.
In a saucepan, add the 1/2 cup butter and sauté the onion till tender, about 2 minutes. Add flour and spices. Stir till combined. Stir and cook for several minutes and then add the milk. Whisk to combine. Continue to cook till thickened. Remove from heat and stir in the cheese.
Pour the cheese sauce over the carrots and combine lightly. In a small dish, add the melted butter to the bread cubes, stir to coat and place on top evenly. Bake for 30 minutes. Enjoy!

Using a blender or food processor, puree carrots to a smooth consistency. 4. Cut the prunes into small pieces. 5. In a large bowl, mix together the carrots, prunes, brown sugar, corn flour, eggs, raisins and cottage cheese. 6. Grease a baking dish with butter and sprinkle with sugar. 7. Place the dough in a baking dish and bake for 25 to 30 minutes in the preheated oven, or until set. Enjoy!
