How To make Cauliflower & Red Lentil Curry
1/2 c Red lentils, rinsed
1 sm Onion, chopped
2 ts Madras curry powder,
1/2 ts Salt
1/4 ts Turmeric
4 Plum tomatoes, chopped
4 c Cauliflower florets
1 Jalapeno pepper, halved,
-- seeded, thinly sliced 1 tb Vegetable oil
1 tb Cumin seeds
3 Cloves garlic, minced
2 ts Minced fresh ginger
1/4 ts Cayenne pepper
2 tb Fresh lemon juice
1 tb Chopped fresh cilantro
1 ts Sugar
In a large saucepan over low heat, combine lentils, onions, curry powder, salt, turmeric, and 2 cups water; bring to a simmer. Cover and cook, stirring occasionally, until the lentils are soft and the sauce has thickened, about 45 minutes. Add tomatoes, cauliflower, and jalapeno peppers and simmer, covered, until the cauliflower is tender, 8 to 10 minutes longer. Remove from heat. Heat oil in a small skillet over medium-high heat. Add cumin seeds and cook for about 10 seconds. Add garlic and ginger; saute until the garlic is lightly browned, about 1 minute. Stir in cayenne and immediately add the oil-spice mixture to the cauliflower mixture. Stir in lemon juice, cilantro, and sugar. Taste and adjust seasonings with additional salt and cayenne. Cauliflower Red Lentil Curry (Quick & Easy)
Yeah, we´ve already made a few curry recipes in the past but a vegan curry can be so versatile, that we decided it is worth to show you more than one version. In this week´s “Can you make it faster?” we show you how to make a cauliflower red lentil curry. I really like the idea of introducing red lentils into a curry. Lentils are a great source of plant-based protein and red lentils in particular are a convenient ingredient for cooking quick and easy meals, because they cook in less than 10 minutes and you can add them directly into your curry. They also have a lot of health benefits. Red lentils are high in protein, rich in fiber and B-vitamins and a great source for iron. Besides the lentils we used cauliflower in our curry recipe. Cauliflower is aside from being delicious a great source for many nutrients, for example Vitamins like Vitamin K, B6 and C. Cauliflower is high in fiber and a good source for antioxidants.

Ingredients Required For Making Cauliflower Chickpea Recipe - Serves 6 to 7
* 1 small cauliflower cut into small florets
* 2 medium to large potatoes cut in the same size like cauliflower
* 1 can(15.5 oz/439 gm) chickpeas (garbanzo beans)
* 1 large or 2 medium onions
* 2 teaspoons finely grated ginger
* 2 teaspoons finely grated garlic (I used 4 large garlic cloves)
* 1 teaspoon salt or to taste
* 1 teaspoon sugar (optional)
* 1 large tomato
* 1/4 th cup frozen green peas
* chopped coriander leaves(cilantro) for garnish
* 1 teaspoon garam masala powder. Make your own garam masala powder at home -
* 1 teaspoon dried fenugreek leaves (kasoori methi)
* 1 teaspoon cumin seeds
* half teaspoon black mustard seeds (optional)
* 2 green cardamoms
* 1 & 1/2 inch cinnamon stick
* 1 dried bay leaf
* 1 dry red chilli (optional)
* 3 tablespoons oil or according to your preference
For the spice paste -
* 2 teaspoons Kashmiri red chilli powder. Please use very less if you are new to using this chilli powder. Though Kashmiri red chilli powder is mild in terms of heat level but it can still be very overwhelming for some people who are not that accustomed to chilli heat. You can always do a taste test at the end and add some more.
* 1/2 teaspoon turmeric powder
* 2 teaspoons ground coriander (dhania powder)
* 4 to 5 tablespoons water
For boiling cauliflower and potatoes -
* 1/2 teaspoon turmeric powder
* 1 teaspoon salt
*** Points To Note-
* Please do not chop the veggies too large
* Take out the cauliflower and potatoes from boiling water as soon as they start to get little tender.
* the cooking time may vary
* heat the oil well first on medium high heat, lower heat to low before adding whole spices. Please remember that it is always favorable to allow the seeds to splutter but please do no wait for long if they are not spluttering, you do not want the seeds to turn too dark and burn because that will ruin your dish.
* You can even use dry chickpeas. Soak about a cup of dry chickpeas in water and a teaspoon of salt overnight. The next day either cook in pot or in a pressure cooker for 25 minutes (it will take much longer when cooking in a pot). Please discard the salty water before cooking and add fresh water.
* the gravy thickens up on cooling as potatoes are there and the chickpeas soak up some of that gravy.
Serve this as side with rice/roti

Red Lentil-Cauliflower Curry Recipe:
3 tbsp grapeseed or peanut oil
1 large onion, chopped
1 large chile pepper (jalapeno or serrano), minced
2 large shallots, diced
1 (1/2 inch) piece of fresh ginger, peeled/grated
1 large parsnip (or 2 small ones), peeled/chopped
2 tsp curry powder
1/2 tsp turmeric
1/2 tsp ground cinnamon
1/2 tsp ground cumin
1/2 tsp ground coriander
1 1/2 cups red lentils, sorted/rinsed
4 cups vegetable broth or water
1 1/2 - 2 lbs. cauliflower (1 medium sized head), trimmed/sliced into small florets
2 tbsp chopped fresh cilantro
2 tbsp lime juice
1 1/2 tsp salt

▶️ RECIPE INGREDIENTS: (4 servings approx.)
???? To cook the Red Lentils:
3/4 Cup / 140g Red Lentils
3+1/2 / 800ml Cup water
1 Teaspoon Turmeric
1/2 Teaspoon salt
???? Curry Ingredients:
3 Tablespoon Cooking Oil (I have used light olive oil)
1 Teaspoon Cumin Seeds
1/2 Teaspoon Chilli Flakes or to taste (you can use 1 to 2 whole dried Red Indian chilies if you prefer)
1 Cup / 130g Onion
1+1/2 Tablespoon Garlic - finely chopped (4 to 5 garlic cloves)
1 Tablespoon Ginger - finely chopped (1 Inch ginger)
1 Teaspoon Ground Coriander
1 Teaspoon Paprika (NOT SMOKED)
1/8 Teaspoon Asafoetida (hing)
1/4 Teaspoon Cayenne Pepper (Optional)
2 Cups / 300g Tomatoes - 3 medium size
Salt to taste (I have added total 3/4 teaspoon pink Himalayan salt)
200g / 6 cups approx. Spinach Leaves
???? Garnish:
1/2 cup / 20g fresh Cilantro / Coriander leaves
Drizzle of Olive Oil (I have added 1 tablespoon of organic cold pressed olive oil)
Lemon Juice to taste
▶️ METHOD:
Thoroughly wash the red lentil a few times, until the water runs clear and then soak it for 1 hour.
Drain the water from the soaked lentils and transfer it to a small pot. Add turmeric, salt and water. Cover and bring to a boil. Once it starts to boil, give it a mix. Reduce the heat to medium-low, cover and cook for about 25 minutes or until the lentils are cooked. Once cooked set aside for later.
✅ ????PLEASE NOTE: The cooking time of the lentils depends on the quality of the lentils. Sometimes one batch of red lentils are drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 25 minutes on my stove.
Heat the oil in a pan. Once the oil is heated, reduce the heat to low (this will prevent the spices from burning). Add the cumin seeds. When the seeds starts to splutter, add the chilli flakes and fry for a few seconds. Then add the onion, 1/4 teaspoon salt and increase the heat back to medium. Fry on medium heat until the onion is soft and browned. (Adding salt to onion will release it's moisture and help it cook faster so please don’t skip it).
Add the ginger and garlic and fry for another one minutes or until fragrant. Add dry spices (coriander, paprika, asafoetida and cayenne pepper) and fry for about 30 seconds. Add the fresh chopped tomatoes, mix well and cook for 1 to 2 minutes or until the tomatoes are slightly soft.
Add the chopped spinach leaves and mix well. Right away add the cooked lentils and mix well. Bring it to a boil and cook for about 3 minutes or so. Turn off the heat.
(Please Note: If the curry is too thick for your liking, you can thin it out with boiling water. DO NOT add cold water to it, otherwise it will ruin the taste)
Add the chopped cilantro, drizzle of olive oil (and lemon juice to taste). Mix well. Serve hot with a steamed rice/naan, green side salad and some pickle.

???? How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer

???? Adding salt to onion will release it's moisture and help it cook faster so please don’t skip it
???? Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, then reduce the heat
