How To make Chapatis (Roti)
Ingredients
1/2
cup
whole wheat flour
2/3
cup
flour, unbleached all-purpose
1/2
cup
water, approximately
1/4
teaspoon
salt, (optional)
Directions:
Make up the dough approximately 1/2-hour before you need it. Allow the
dough to rest about 10 minutes. Pinch off portion of dough to form a ball
about 1 1/2 inches in diameter. Roll ball flat on lightly floured surface.
Pat back and forth between hands until thin. (Patting makes the chapati
puff when baked.)
Cook on top of the stove on ungreased griddle until browned and puffed. Use
medium heat so the griddle does not get too hot.

Ingredients for making roti/chapati -
* 1 & 1/2 cups (standard measuring cup) whole wheat flour (chapati flour or atta)
* Little less than a cup of hot boiling water. Use the same cup to measure water in which you measured your flour. Please do not stick to this proportion of water strictly. Depending on the quality of the flour used you may need more or less water. Keep a bowl of warm water by the side while kneading. Dip your knuckle in the water and then press out the dough as shown in the video.
* 1/4 th teaspoon salt (optional)
* 1 teaspoon oil (optional but it helps to keep the rotis soft)
* I like brushing my rotis with little extra virging olive oil as soon as they are taken out of the tawa. You can apply ghee or butter or skip this step entirely but the oil keeps the rotis soft even if you want to store them for 2 days.
Store the leftovers in an airtight container in the refrigerator. Right before eating you can warm them up in a pan over low heat. You can even brush them with little water and microwave for 20 to 30 seconds.
Serve rotis with any curry of your choice or lentils.

Chapati using batter or liquid dough recipe explained in this video with Kannada narration and English subtitles. This is a a very easy method to prepare chapathi using liquid batter. You need not roll the chapati or prepare the dough. Just make the batter and prepare the roti. This method can be used when you want to prepare chapati or roti without rolling. I have used 1/2 maida and 1/2 wheat flour in this chapati. However you can prepare it with full maida or full wheat flour. Maintaining the correct temperature and using a non-stick pan are some of the requirements to get the recipe right!

Unlike traditional breads, Chapati is simple to make as there's no yeast, so no proving. It only requires five minutes of kneading, ten minutes of resting and cooks in seconds. It's origins are from India and is also common in South East Asia.Your kitchen will smell of toasty hot bread, and if you're like me you won't resist eating at least one piece with a little melted butter. I used all purpose or plain flour, but traditionally whole wheat flour is used which makes it a little coarser.
