How To make Chard Enchiladas
2 tb Canola oil
2 Garlic cloves
;peeled and chopped 1 Onion, peeled and chopped
4 c Chard, coarsely chopped*
1 tb Butter
1 tb Flour
1/2 c Milk
1/2 c Cheddar cheese, grated
6 Corn tortillas
1/2 c Hot salsa
*Chard can be mixed with spinach and kale and other in-season greens. Preheat oven to 375 F. Heat oil; saute garlic and onion until golden. Add chard (in small amounts) until it is cooked down. Make a bechamel sauce; melt butter, stir in flour, add milk and cheese. Stir until thick, then mix into cooked greens. Fill center of each tortilla, roll up, place in lightly oiled baking dish. Pinto bean and Swiss chard enchiladas
1/4 cup veggie oil
2 onion,finely chopped salt and pepper
3 teaspoons organic sugar
3 tablespoons chili powder
2 teaspoons chopped cumin
6 garlic cloves minced
2 (8oz) cans tomato sauce
1/2 water
1 lb Swiss chard stemmed and sliced into 1/2 in-wide-strips
2 green bell peppers stemmed and seeded and sliced into 1/2 pieces
1(15 oz) can pinto beans rinsed
12 (6 in) corn tortillas, warmed
1 recipe cilantro sauce
1 Avocado halved pitted and sliced into 1/2 in pieces
1/4 cup fresh cilantro leaves
Limes wedges

Swiss Chard Frittata Recipe Ingredients :
1. Sauté Swiss Chard : 00:10
Oil - 2 Tbsp
Red Chilli flakes - 1/2 tsp
Mixed herbs - 1 Tsp
Grated Ginger - 1 Tsp (1 Inch)
Add Chopped Swiss Chard Stems (Use soft stems)
Add Chopped Swiss chard Leaves
Swiss Chard (250 grams)
Black pepper powder - 1/2 tsp
Salt - 1/2 tsp (Add less salt)
2. Sauté Aloo : 03:01
Oil - 1 Tbsp
Cumin seeds / Jeera - 1/2 tsp
Chopped Potato - 1 large size
Haldi / Turmeric powder - 1/2 Tsp
Red Chilli powder - 1/2 Tsp
Garam Masala - 1/4 Tsp
Coriander powder - 1/2 tsp
Chaat Masala - 1/2 tsp

Water - 2 Tbsp
3. Prepare Batter : 04:13
Besan / gram flour - 3/4 cup
Salt - 1/4 tsp
Green chilli paste - 1/4 tsp
Water - 1/2 cup (Add gradually and mix)
Baking Soda - 1/2 tsp
Lime juice - 1 tsp
4. Cook Frittata : 05:14
Coriander - Garnishing
Cherry Tomato - As per taste
5. Swiss Chard Frittata Ready to serve : 06:19
Serve with Salad , Tomato Ketchup or Green Chutney
