One Pan Chicken with Broccoli - Dinner in 30 Minutes
One pan chicken with broccoli can be made up in literally 30 minutes. This makes it a great midweek meal. If your schedule is a busy one, and your family likes Asian food, this is the recipe for your. As an additional bonus, the ingredients are simple and most of them are probably kicking around your kitchen. Get the recipe:
As with any recipe, there are a few variations. First, any cut of chicken can be used. I like boneless, skinless breasts because they are so healthy and easy to work with. One pointer is to make sure your chicken is at room temperature to ensure it cooks evenly.
In terms of the rest of the ingredients, you can vary them according to your liking. For example, if you're a garlic lover, use more; on the other hand, if you're not, use less. If you find the garlic and ginger are a bit too raw, you can toss them in with the broccoli to get a bit more of a cook on them.

Let’s make an easy chicken and broccoli stir fry that tastes better than takeout! This chicken and broccoli recipe is ready in one pot and tastes less than 30 minutes from start to finish! Try this delicious chicken stir fry for your weeknight meals or meal prep in advance to enjoy through the week!

RECIPE (2 servings)
INGREDIENTS:
1 lb/450g chicken breast
1 large/2 small heads broccoli
1 tbsp ginger finely chopped
1/2 tbsp garlic finely chopped
1/2 tsp salt
1 tbsp cornstarch
—stir fry sauce—
2 tbsp oyster sauce
2 tbsp soy sauce (light/regular)
1/2 tbsp dark soy sauce
1 tsp sugar
1 tbsp cornstarch
1/2 cup water
—pickled broccoli stem—
1 cup water
4 tbsp vinegar (any kind)
1 tbsp salt
1 red chilli (optional)
METHOD:
1. Cut broccoli florets into bite sized pieces and soak it in a mixture of water with 1 tsp baking soda for 15-30 mins. This will clean the broccoli thoroughly. Once soaked, rinse it with clean water
2. Cut the chicken into bite sized pieces and coat with 1/2 tsp salt, 1 tbsp cornstarch and set aside for 15-30 mins
3. While the chicken is marinating, let’s make pickled broccoli stem! Cut the hard base and peel the tough outer layer of the broccoli stems. Thinly slice and cut into matchsticks
4. Prepare a brine with water, vinegar, salt and chilli. Add the broccoli stems and let it marinate until the dish is cooked
5. Combine ingredients for the stir fry sauce in a bowl. This makes it very easy while cooking
6. To a pan/wok on high heat, add 3 tbsp oil and stir fry the chicken until its cooked though (about 5-6 mins). Check a big piece of the chicken to see if its done and set them aside
7. To the same pan add broccoli florets and stir fry on high heat until lightly charred. The light char adds a lovely smoky aroma
8. Add some oil if needed and stir fry ginger and garlic for 1 minute
9. Pour in the sauce and stir for 1 min for crunchy broccoli and 3 mins for soft/tender broccoli
10. Add the chicken and stir fry for 1 minute
11. For more sauce, add 1/2 cup water + 1 tsp cornstarch. Taste and adjust salt as needed
12. Serve it with rice and pickled broccoli stem

SUBSTITUTES:
• No oyster sauce?
Sub 1.5 tbsp regular soy sauce + 0.5 tbsp sugar
Hoisin sauce also works well
• No dark soy sauce?
Skip it
• No vinegar?
Lime juice works too
• No fresh red chilli?
1 tsp red chilli flakes for too

TIPS:
• Don’t overcook the chicken. It should not take too long to cook small pices of chicken breast
• Taste and adjust seasoning as needed
• There is no spice added to the stir fry as the pickled broccoli stem will be spicy. If you don’t want to make it, add a bit of chilli/pepper to the stir fry

Chicken & Veggie Stir-Fry
Servings: 6
INGREDIENTS
1 pound chicken breast, cubed
Salt, to taste
Pepper, to taste
1 pound broccoli florets
8 ounces mushrooms, sliced
3 tablespoons oil for frying
Sauce
3 cloves garlic, minced
1 tablespoon ginger, minced
2 teaspoons sesame oil
⅓ cup reduced sodium soy sauce
1 tablespoon brown sugar
1 cup chicken broth
¼ cup flour
PREPARATION
1. In a large pan, on medium-high heat, add 1 tablespoon of oil. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned.
2. Remove cooked chicken from pan and set aside.
3. In the same pan, heat 1 tablespoon of oil and add mushrooms. When the mushrooms start to soften, add broccoli florets and stir-fry until the broccoli is tender. Remove cooked mushrooms and broccoli from the pan and set aside.
4. Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce ingredients and stir until smooth.
5. Return the chicken and vegetables to the saucy pan, stir until heated through.
6. Serve with hot rice or noodles.
7. Enjoy!

Tapioca starch

Dark soy sauce

Instructions:
1. Marinate chicken w soy sauce, starch, and cooking oil
2. Make starch mixture (starch and water) set aside
3. When wok is hot, add 2 tbsp of cooking oil
4. Add ginger
5. Add garlic (stir 7-10sec)
6. Add chicken (4-6 min)
7. Remove chicken
8. Add 2 tbsp of cooking oil
9. Add broccoli, oyster sauce, and chicken stock
10. Mix for a bit. Then cover and simmer 2-3 min
11. Add starch mixture, chicken, and a bit of sesame oil
12. Add 1 tbsp of dark soy sauce
DONE !!! So delicious!!
Super Quick Stir Fry Broccoli and Carrot with Chicken | Chicken with Broccoli Recipe
300 grams of broccoli
1/2 carrot
3 cloves of garlic
250 grams of chicken breast
A pinch of salt
A pinch of black pepper
2-3 tablespoons of oil
1 tablespoon of light soy sauce
2 tablespoons of oyster sauce
1/2 teaspoon of dark soy sauce
1/2 cup of water
Corn starch slurry - 1 teaspoon of corn starch + 2-3 teaspoon of water
