My first time I went to an Italian restaurant, I ordered chicken cacciatore. Loved the taste of the red sauce and all the chopped vegetables and chicken. Mark Distolfo, executive chef of the Napper Tandy Restaurants demonstrates how he prepares chicken cacciatore.

Pollo 1 intero (meglio se ruspante), circa 1,5 kg
Sedano 80 g Cipolla 100 g
Carota 100 g
Salvia 3 foglie
Rosmarino 1 rametto
Alloro 2 foglie
Aglio 1 spicchio
Olio extravergine di oliva 50 g
Olive nere denocciolate 80 g
Pomodori pelati 400 g (o passata di pomodoro)
Vino rosso 200 g (o bianco)
Prezzemolo fresco 1 mazzetto
Peperoncino fresco 1
Brodo vegetale q.b.

00:00 - Pollo alla Cacciatora: Preparazione Iniziale
Inizio preparando il trito di carota, cipolla e sedano. Sbuccio le carote, le faccio un po' più sottili e poi da queste striscioline ottengo i nostri quadratini. Faccio la stessa cosa con il sedano, però prima tolgo i filamenti. Partendo dalla base intacco con un coltello e poi tiro e togliamo le parti un po' filamentose. Taglio anche queste a striscioline e poi ricavo i miei cubetti. E ora la cipolla. Taglio degli strati orizzontali, poi faccio dei piccoli taglietti in verticale. Ecco i nostri quadratini!

Ora nel mio tegame metto dell'abbondante olio extravergine di oliva. Aggiungo il mio trito di sedano, carota cipolla. Lascio rosolare a fuoco molto basso per almeno 10-15 minuti.
01:12 - Pollo: Preparazione delle Erbe Aromatiche
Nel frattempo, vado fare il mio trito di erbe aromatiche. Metterò all'interno della pentola l'alloro intero. Poi possiamo toglierlo. Vado a tritare aglio, salvia e rosmarino, e poi aggiungo anche un pezzetto di peperoncino. Aggiungo in tegame le foglie di alloro e il trito di erbe aromatiche e odori. Ora mescolo. Lascio insaporire per altri 10 minuti.
01:48 - Pollo alla Cacciatora: Cottura del Pollo
E adesso aggiungo i pezzetti di pollo all'interno della pentola. Dovrò fare rosolare per almeno 15 minuti. Mi raccomando: rigiriamo li di tanto in tanto. Possiamo aggiungere un goccio di brodo o di acqua calda per non fare bruciare il fondo. Ora che le carni si sono sbianchite, quindi non son più crude, vado ad aggiungere il vino rosso e lo lascio sfumare completamente. C'è anche la variante con il vino bianco. Si dice che il vino bianco venga usato più nel Nord Italia, mentre rosso nel Sud italia. Io aggiungo le olive nere, ma ci sono alcune versioni in cui le olive non sono presenti, a secondo dei gusti.
02:37 - Pollo alla Cacciatora: Fase Finale e Servizio
E ora il momento dei pomodori! Io ho scelto dei pelati, ma tu puoi usare anche la passata. Aggiungo un po' di sale, un po' di brodo o acqua calda. Abbasso il fuoco. Metto il coperchio e lascio cuocere per almeno mezz'ora. Ogni tanto controllo. Nel frattempo trito il prezzemolo. Ci siamo, spengo il fuoco. Aggiungo il prezzemolo tritato, do una mescolata e il pollo alla cacciatora è pronto! Semplice e gustoso e adatto ad ogni occasione: non mi resta che portarlo in tavola!
