CHICKEN CASSEROLE WITH CREAM OF CHICKEN SOUP - Chicken Divan
This is a favorite dish of mine, Chicken Casserole With Cream Of Chicken Soup. As you'll see in this video, it's easy to prepare & it's likely you have the ingredients on hand. The part I like best about this is that it doesn't take a million ingredients nor much time to prepare. Not to mention, it's a great way to get the kids to enjoy Broccoli!
This recipe for Chicken casserole with cream Of Chicken Soup or Chicken Divan as it's also known, is something I learned to prepare many years ago. I've served it to the family at least two to three a month, by request! I could serve it more and the family would love it, however, please be aware, it's rich! It's not exactly a diet dish, if you get my drift.
I should mention that one could use precooked chicken cubes in place of the chicken breasts and that would speed up the process even more! Also, one should use 8 to 9 ounces of Mayo. In the video I neglected to mention the proper amount.

Here’s your recipe!
2 - 10 Oz Pkgs Frozen or Bunches Fresh Broccoli
1/4 Cup Butter
1/4 Cup Flour
2 Cups Chicken Broth
1/2 Cup Heavy Cream
3 TBS Sherry
1/2 TSP Salt
1/4 TSP Pepper
3 Chicken Breasts, Cooked and Thinly Sliced Lengthwise
1/2 Cup Shredded Parmesan Cheese
Heat oven to 350. Cook Broccoli till tender if fresh, according to package directions if frozen. Place in 9x13 pan. Melt butter in saucepan, blend in flour, add chicken broth and stir constantly until thickened. Stir in cream, sherry, salt and pepper. Pour HALF the mixture over the broccoli. Top with chicken slices. Add 1/4 cup parmesan into the remaining sauce and mix well. Pour remaining sauce over chicken. sprinkle with remaining parmesan. Bake 20-30 minutes until hot. Place under the broiler just until sauce is golden brown.
How to Poach the Chicken
Place chicken breasts in a large skillet.
Cover with water going about 2 inches over.
Add 1 TBS Salt
Bring water to a boil, then lower heat to simmer.
Simmer for 10 minutes.
Then turn off heat but keep on burner and cover pan.
Let sit in the water for another 20 minutes.
Let chicken cool then slice horizontally. You should get three slices per chicken breast.

Chicken Divan w/ Rice | Cheesy Chicken & Broccoli Casserole | Comfort Food Recipe
Day 6 of Countdown to Christmas is another comfort food! Cheesy Broccoli Chicken and Rice Casserole! This dish is so creamy, cheesy, and comforting, its everything you need on a cold winter day!
INGREDIENTS:
2 chicken breasts, cubed and cooked
2 heads of broccoli, chopped (or you can use a 16oz bag of frozen broccoli, thawed)
2 cups of cooked rice
1 can of cream of chicken soup
3/4 cups of half and half or milk
8oz of Gouda, shredded
8oz of sharp cheddar, shredded
1 cup of mayonnaise
1 tsp of oregano
2 tsp of garlic powder
1 tsp of onion powder
2 tsp of salt
2 tsp of black pepper
Cayenne Pepper, optional
RECIPE NOTES:
- Bake in a 350 degree oven for 25-30 minutes or until cheese is melted bubbly around the edges.
- If using fresh broccoli, sauté or steam for 2-3 minutes before mixing in casserole.
- Feel free to use whatever cheese combination you like! I personally enjoy cheeses that are sharp and have a nice bite to them, especially when paired with broccoli.
- I recommend using block cheese and shredding it yourself rather than pre-shredded cheese, simply because block cheese melts better.
- Top with red pepper flakes like I did for an extra kick!

This is mom's contribution to our MARCH-ing in with Casseroles. It is her Chicken Divan that she submitted for her churches cookbook some time back. Now she does change hers up a bit, but it is amazing and was always one of my childhood favorites. Y'all have to forgive her, she made her own croutons but kept calling them bread crumbs. So here ya go.
Chicken Divan
Ingredients:
20oz Broccoli (steamed fresh or frozen)
2 cans chicken soup (I replaced one with cream of mushroom)
1 tablespoon lemon juice
1/2 tablespoon curry powder
1 1/2 cups bread crumbs or croutons
2 cups chicken cooked and shredded
1 cup mayonnaise
1 teaspoon salt and pepper
1/2 cup shredded cheese
1 tablespoon butter
Steam broccoli and layer in pan. Lay chicken over top of broccoli.
Mix the soup, mayonnaise, lemon juice salt/pepper and curry powder in a bowl and mix well.
Pour mixture over the chicken/broccoli mixture.
Sauté the bread crumbs/croutons in butter till well browned
Spread evenly over casserole and then bake for 45 minutes to 1 hour at 300°F
