How To make Chicken Romaine Vinaigrette
4 Chicken breast halves
- boned & skinned
HERBED VINAIGRETTE:
3/4 c Soy oil
1/4 c Tarragon white wine vinegar
1/4 c Chopped fresh parsley
1/4 c Chopped fresh basil
1 tb Finely chopped green onions
SALAD:
1 1/2 lb Romaine lettuce
1/2 c Sliced water chestnuts
1/3 c Fresh parmesan cheese
3/4 c Seasoned croutons
Score chicken breasts and top with 1 tablespoon Herbed Vinaigrette per breast. Marinate in the refrigerator for at least one hour. Grill chicken 15 minutes & slice diagonally. Wash & tear lettuce leaves into large bowl. Top with 1/2 cup dressing, cheese, water chestnuts, and croutons. Toss together. Divide lettuce onto plates & top with sliced chicken. Serves 4-6 persons. (Per Serving): 266 calories/22 grams protein/5 grams carbohydrates/17 grams total fat/4 grams saturated fat/53 mg cholesterol/179 mg sodium HERBED VINAIGRETTE: Combine all ingredients in a jar. Shake well. Refrigerate. May be used as a marinade or salad dressing. Yields 18 tablespoon servings. Simply and delicious roasted chicken salad. Try it!
Grilled Chicken Caesar Pasta Salad
Here’s what you need:
Ingredients:
10 oz Farfalle Pasta (“Bow-Tie” Pasta)
3 Chicken Breasts
3 Tbsp. Olive Oil
Salt, to taste
Pepper, to taste
2 heads Romaine Lettuce, cut in 1-2 inch pieces
1 cup Grape Tomatoes, cut in half
1 cup Croutons
Parmesan, to taste
3/4 cup Caesar Salad Dressing
Instructions:
Boil water, add the pasta and cook according to package instructions. Drain water, and let the pasta chill. Meanwhile, season each of the chicken breasts with 1 Tbsp. olive oil, salt and pepper. Grill for 6-8 minutes on each side. Cut the chicken into bite size pieces. In a large bowl combine pasta, romaine lettuce, tomatoes, croutons, parmesan, and caesar dressing. Toss gently and serve! Enjoy!

I've Spent 15 Years Perfecting This Chicken Caesar Salad Recipe
My chicken caesar salad isn't exactly a traditional or classic preparation but that's exactly what I like about it. I believe people who don't even like anchovies will appreciate this dressing.

Caesar Dressing Recipe:
1 whole egg
1 tsp water
2-3 garlic cloves
2-3 anchovies
1-2 tsp Worcestershire
1 tbsp lemon juice
1/2 tbsp WW vinegar
3/4 cup avocado oil
2 oz Parmesan
5 tbsp EVOO
Salt and pepper to taste
Garlic Basil Chicken Recipe:
2 lbs chicken breast
5-7 cloves of peeled garlic chopped
1/2 tsp kosher salt with the garlic
10 sprigs of fresh thyme stripped (optional)
2 oz fresh basil picked from stem
1 tsp chili flakes
1/3 cup extra virgin olive oil
Fresh lemon and Maldon salt to finish
Paper Crostini Recipe:
4 cups thinly sliced bread of choice (I use sourdough)
2 1/2 tbsp unsalted butter
2 1/2 tbsp olive oil
2 tbsp water
1 tsp garlic powder
1/3 cup parmesan cheese
salt and pepper to taste

Healthy Chicken Caesar Salad | Jamie Oliver
Jamie’s chicken caesar salad is lighter, fresher and half the calories of a regular caesar salad while still high on flavour. Replacing the mayo sauce with a quality yogurt dressing slashes the saturated fat content and using skinless chicken breasts sprinkled with rosemary keeps the dish lean. Finish with a grating of parmesan and tuck in.
