Chicken Bread
Recipe in English:
Ingredients:
Dough:
-Maida (Flour) 2 cups
-Khameer (Yeast) instant 1 & ½ tsp
-Cheeni (Sugar) 1 & ½ tsp
-Namak (Salt) 1 tsp
-Doodh (Milk) room temp ¼ cup
-Oil 5-6 tbs
-Pani (Water) warm 5-6 tbs or as required
Chicken filling:
-Makhan (Butter) 2 tbs
-Pyaz (Onion) Chopped 2 tbs
-Maida (All-purpose flour) ¼ cup
-Doodh (Milk) 1 cup
-Kali mirch powder (black pepper powder) ½ tsp
-Namak (Salt) ½ tsp
-Chicken Boiled & shredded 1 & ½ cup
-Dhania (Green coriander) 2 tbs
-Shimla mirch (Capsicum) 2 tbs
-Zaitoon (Olives) 2 tbs
Assembling:
-Chicken filling
- Anda (Egg) 1+ Doodh (Milk) 1 tsp
- Kalonji (nigella seeds) as required
- Safed til (sesame seeds) as required
Directions:
Dough:
-In bowl, add all-purpose flour,instant yeast,sugar and salt,mix well.
-Make a well,add milk and gradually add oil and mix it with the help of hands.
-Add warm water (as required), mix and knead well until all ingredients are combined.
-Take dough,punch and knead it again and grease the dough with oil.
-Cover and leave the dough for 1 & 1 ½ hour in a warm place.
-Knead dough again,cover and rest again for 30 minutes.
-Bread dough is ready.
Chicken filling:
-Boil the chicken with salt and black pepper powder, shredded and set aside.
-In wok,add butter,let it melt then add onion and sauté little.
-Add all-purpose flour and sauté until its color changes.
-Remove from heat,add milk,whisk continuously to avoid any lumps formation.
-Bring back on heat,add black pepper powder, salt and mix it.
-Add boiled and shredded chicken,green coriander,capsicum,olives and mix well.
-In filling, you can use vegetables or mince (any of your choice).
Assembling:
-Roll out the dough into a rectangular shape with the help of rolling pin.
-Place the filling in the center of the dough.
-Make slits/cuts with the help of knife on both of the longer sides.
-Start bringing the top most slit ends across from each other alternately.
-Keep going, remember to alternate,left to right and right to left.
-Put dough in a baking tray, apply egg-wash,sprinkle nigella and sesame seeds then bake in a preheated oven at 180 C for about 20-25 minutes.
-Serve hot.
(Egg-wash means to beat an egg with a tbs. of milk then brush it all over your bread)

-Garha bana ker doodh aur thora thora ker ka oil daltay rahein aur haathon ki madad sa mix ker lein.
-Neem garam pani shamil kertay jayein aur maida ko ghond lein yahan tak ka tamam ajza combine ho jayein.
-Dough ko punch mar ker ache tarhan ghond lein aur oil sa grease ker lein.
-Dhak ker dough ko 1 & ½ hour kliya garam jagha per rakh dein.
-Dough ko dubara ghond lein,dhak ker dubara 30 minute kliya rakh dein.
-Bread dough tayar hai.
Chicken filling:
-Chicken ko namak and kali mirch dal ker boil kar len aur resha ker ka side per rakh den.
-Karhai mein makhan dal ker melt ker lein,pyaz dal ker halka sa sauté ker len.
-Maida dal ker rang tabdeel hunay tak saute ker len.
-Chulhay sa hata ker doodh shamil karein aur musalsal whisk kertay rahein ta ka koi lump na banay.
-Chulhay per dubara rakh ker kali mirch powder aur namak dal ker mix ker lein.
-Chicken boiled & shredded,hara dhania,shimla mirch aur zaitoon dal ker ache tarhan mix ker lein.
-Filling mein apni marzi ki sabzian ya qeema bhi shamil ker saktay han.
Assembling:
-Dough ko rolling pin ki madad sa rectangular shape may bail lein.
-Filling ko dough ki center mein rakh dein.
-Dough ki dono sides per knife ki madad se slits/cuts laga lein.
-Ab ek ek ker ka slit ends ko ek dosray per alternatively overlap ker lein.
-Left sa right aur right sa left overlap ker lein.
-Dough ko baking tary per rakh ker egg sa wash ker len,kalonji aur safed til sprinkle ker len aur preheated oven mein 20-25 minute kliya bake ker len.
-Garam serve karein.

Stuffed Chicken Breasts Recipe
Hi Guys, today I’ll show you How to Make Stuffed Chicken Breasts with Spinach and Cheese. This is a very comforting and tasty meal. PRINT RECIPE:

All the ingredients and measurements are listed below this video. I’m using boneless, skinless chicken breasts. This recipe makes 6. Fresh spinach leaves, you can substitute frozen chopped spinach, just make sure you squeeze out all the liquid after thawing. Grated garlic, cream cheese, parmesan cheese or pecorino romano cheese. We’ll also need all purpose flour and olive oil. First we’ll pound the chicken so it’s thin. Place the chicken on plastic wrap and put another piece on top. Use a meat mallet or small heavy pan to pound it thin evenly. It’ll look like this. Heat up a pan and pour in 2 tablespoons olive oil. Grate the garlic right into the pan. Make sure the heat is low so the garlic doesn’t burn. Cook for 20 seconds just so the raw flavor goes away. Add the spinach leaves, ¼ tsp ground black pepper, sprinkle on a little coarse salt and stir. When it wilts, add the rest of the spinach. It’ll cook down in just a few minutes. The spinach is cooked, set it aside. Season both sides of each piece of chicken with coarse salt and ground black pepper. Chop the cooked spinach and move to a bowl. Grate the parmesan on the large holes of a box grater or use a food processor. You should have 2 ounces or 60 grams. To the spinach, add the cream cheese, leave it out of the fridge for a while so it gets soft and is easier to mix. Add the parmesan. Taste and add more salt or pepper if you like. Spread ¼ cup of all purpose flour on a plate. You can use toothpicks or kitchen twine to hold the chicken together. Put some of the spinach cheese filling in the middle of the chicken. Roll the chicken as tight as possible and secure with toothpicks or twine. If you have too much filling oozing out the sides, remove it. Coat the filled chicken in flour. Heat up a pan and pour enough oil to coat the bottom. You can use vegetable oil, olive oil or a combination. When the oil is hot, put the chicken in. Brown on one side, turn over and brown the other side and all over. After browning, the chicken is almost cooked. I finish cooking the chicken in a heated 350 degree oven for 5 to 8 minutes. If you want to continue cooking it in the pan, that’s fine too, brown all the breasts, then put them back in the pan with only a tiny bit of oil, cover and cook until done. When the chicken is cool enough to handle, pull the toothpicks out. The meat is juicy and the filling is creamy. Slice it a few times an it looks even prettier. 3 - Medium to Large Brown (Yellow) Onions, Diced
2 - Cloves of Garlic, Thinly Sliced
12 - Fresh Sage Leaves, Roughly Chopped (Substitute for 2 tsp-2g of Dried Sage Leaves)
5g (0.10z) - Flat Leaf Parsley, Roughly Chopped (Substitute for 1/2 tsp-0.5g of Dried Parsley Flakes)
220g (7.7oz) - Fresh White Breadcrumbs (Crusts Removed) SEE NOTE BELOW
107.5g (3.7oz) - Unsalted Butter, Cubed
(100g (3.5oz) and 7.5g (0.2oz) Separated)
Salt & Pepper to taste
Notes* -
Sage can be substituted for 2 tsp-2g of Dried Sage Leaves
Flat Leaf Parsley can be substituted for 1/2 tsp-0.5g of Dried Parsley Flakes
Separate the Unsalted Butter into 100g (3.5oz) and 7.5g ( 0.2oz) portions.
Coarse breadcrumbs by hand -
Remove the crusts from the bread and chop the bread up using a sharp knife just until it resembles large bread crumbs. It doesn’t have to be extremely fine (the same as a food processor). Using this stuffing to stuff poultry -
When using this stuffing actually as a stuffing, make sure to have it completely cold (straight out of the fridge). This will prevent any bacteria from forming due to the chicken being cold and the stuffing being hot. The temperature levels will be completely different, resulting in the chicken entering the danger zone which is a temperature scale to which bacteria starts to grow.
