Mediterranean style chicken
2 chicken legs braised with
8oz. onions,
1 T. minced garlic,
1c. tomato sauce,
1 c.chicken stock,
4 bay leaf,
1 tsp. thyme,
2 medium button mushrooms,
1/4 c. green peppers,
1 T. capers,
1 tsp. hot sauce,
1/2 c. pitted olives,
2 oz. celery,
1/4 c. dry white wine

Garlic & Rosemary Chicken #shorts
A mid-week winner that takes less than 15 minutes. Share this with the cook in your house and have this on the dinner table TONIGHT! :)
Serves: 4
4 garlic cloves
2 pinches sea salt
2 tbsp olive oil
4 chicken breast fillets
3 rosemary sprigs
Zest of 1 lemon
25g butter
500g cherry tomatoes
500g fresh gnocchi
Handful of basil leaves, plus extra to serve
Grated pecorino, to serve
Sea salt & freshly ground black pepper
1. Mash the garlic cloves on a chopping board with the sea salt until a rough paste forms. Add the chicken fillets to a large bowl with 1 tbsp of the olive oil, the garlic paste, rosemary sprigs and lemon zest. Toss to fully coat the chicken.
2. Heat the remaining olive oil in a non-stick frying pan, add the chicken breasts and brown over a high heat for 2 minutes on each side until golden.
3. Push the chicken breasts to one side of the pan and add tomatoes to the pan with the butter. Cook, stirring, until the tomatoes start to soften, then reduce the heat and cook for 10 minutes until the chicken is cooked through and the tomatoes have reduced down slightly. Using a fork, burst some of the tomatoes to bring out some of their juices for the sauce.
4. While the chicken cooks bring a large saucepan of salted water to the boil and add the gnocchi. Cook for just a minute or two until they float to the surface, then remove them with a slotted spoon and add straight to the chicken pan, with the basil leaves.
5. Serve the chicken and gnocchi in wide bowls garnished with basil leaves and pecorino.

The Best Chicken Parmesan Recipe - Easy and Flavorful Italian Dish!
Discover the secrets to making the best chicken Parmesan, a mouthwatering Italian classic that’s perfect for any occasion. This recipe combines tender, crispy chicken with savory marinara sauce and gooey melted mozzarella, creating a dish that will please even the pickiest of eaters. Follow along to create this delectable meal in your own kitchen.
Chicken Parmesan Recipe:
Ingredients:
4 Boneless, thinly sliced Perdue chicken breasts
Salt and freshly ground black pepper
2 cups of all-purpose flour, seasoned with salt and pepper
4 large eggs
2 cups of Italian seasoned panko bread crumbs
1 cup of Canola Oil
Tomato sauce recipe below or if it is a last-minute meal you can use your favorite jar sauce (i like Barilla Tomato Basil Sauce)
1 pound of Mozzarella thinly sliced
1/4 of grated Parmesan
Directions:
Preheat oven to 400 degrees F.
Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs.
Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some Tomato Sauce, a few slices of mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted for about 20 minutes. Remove from the oven and garnish with basil or parsley leaves.
Ingredients for Tomato Sauce:
2 tablespoons of olive oil
1 large onion, chopped (i prefer onions already chopped for me, I hate cutting onions! I get mine at Whole Foods)
4 cloves of garlic minced
2 28 ounce cans of Plum tomatoes and their juices, Blended in a blender
1 16-ounce can of crushed tomatoes
bunch of fresh Basil
1 small can of tomato paste
1 bay leaf
1 small bunch of parsley
Salt and Pepper to taste
Directions:
Tomato Sauce:
Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Basil, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.
