Healthy Chile Rellenos Recipe
Healthy version of Chile Rellenos. I was invited to do a healthy version of a traditional Mexican recipe for the new year. I love chile rellenos & for this challenge, I decided to not fry them. I also used grass-fed ground beef as well as a Lacto-fermented salsa instead of the traditional fried salsa.
I plated this meal up with black refried beans, a quick salad & fermented jamaica.

The SHOCKING SECRET to great chili

***RECIPE***
Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
Zucchini Fritters (vegetarian & vegan)
Get the Recipe:
⭐️ Make them with or without eggs and serve them as a starter, side dish, or main dish with our marinara sauce, sour cream, or tzatziki sauce. We are sure you'll love them!
⭐️ Ingredients
2 pounds zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
¾ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed
SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream
Metric:
900 g zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water

110 grams all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed

Meatless slow cooker meals for the whole family
Check out these lacto-vegetarian meals that my family enjoyed. I tried another recipe that did not turn out. Let me know in the comments if you'd like to see recipe flops in future videos (they could be helpful to see what things don't work, but for now I've decided to try that recipe again with a few tweaks and share it in a future video).

Brussels Sprouts Soup - This recipe is not overly picky, I've made various adjustments based on what I happen to have when I'm cooking it.
butter
2 leeks (or 1 onion), diced
2 ribs celery, diced
3 carrots, sliced
1 QT chicken (or vegetable) stock + 2-4 C water
potatoes, chopped
1-2 C cream
1 lb Brussels sprouts, halved (or quartered if they are really big)
Kale
salt and pepper
Saute onion, celery, and carrots in butter until soft (season with S&P).
Add stock and water + potatoes (my original recipe says to wait to add the cream, but I sometimes add the cream now), slow cook until potatoes are almost tender (high 2-4 hours or low 5-8 hours), Add Brussels, kale, S&P, (and cream if you didn't earlier) and cook at least another 30 minutes (You should be able to throw all of these in the slow cooker when you put in the potatoes, but I didn't test that for this video)
