Fortune Cookies Recipe (Homemade Easy Chinese Recipe) CiCi Li - Asian Home Cooking Recipes
Today let’s make fortune cookies. Fortune cookies are given after a meal in most of the Chinese restaurants in the US. Believe it or not, before coming to the US, I have never seen a fortune cookie before. Some say it was invented by a Japanese immigrant, others say it was invented by a Chinese immigrant. Five Spice Fortune Cookie | Hungry AF
Ring in the Chinese New Year with these chocolate five spice fortune cookies.
For more Hungry AF recipes:
INGREDIENTS
2 egg whites
½ cup sugar
½ tsp vanilla extract
¼ tsp almond extract
6 tbsp melted butter
A few drops of red food coloring
½ cup all-purpose flour, sifted
¼ tsp Chinese five spice
pinch of salt
For chocolate dip:
6 oz. semisweet chocolate, melted
¼ tsp Chinese five spice
RECIPE
In a mixing bowl, whisk egg whites and sugar together until the sugar has mostly dissolved. Then add vanilla and almond extracts and whisk again.
Add sifted flour, five spice, salt and mix until combined. Then mix in melted butter and red food coloring.
Preheat oven to 325F. Working with 2 at a time, spoon about 1-2 teaspoons of batter onto a parchment-lined baking sheet, and use the back of a spoon or offset spatula to spread the batter into a 4-inch diameter circle. Bake for 8-10 minutes, or until the edges turn slightly darker.
Working quickly, use a spatula to remove the cookie from the sheet. If placing a paper fortune inside, place the message in the center. Then use your fingers to quickly fold the cookie, bringing the edges together at the middle. Immediately hang it on the edge of a cup to complete the shape. Place it in a muffin tin to hold its shape, while quickly working on the next cookie.
In a bowl, mix five spice into melted chocolate, dip outside edges of each cookie in chocolate, and let cool completely

How To Make Fortune Cookies
How to make your own fortune cookies. This was the first time I tried making these and they are easy once you get the hang of the baking process and get the timing right. If you are making these for an event, I would try a batch before hand to get some practice at it too see how they turn out for you.

The most important thing about making these cookies is to spread the batter out enough so that it is very thin. Thin cookies will be very crisp and dry when cool.
If the cookies are too thick, they won't crisp up when cool and the fortunes inside may stick to the cookie.
This is where I found the recipe:
2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water
Preparation:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.
2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.
3. Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.
4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
Note: if you want to dye the fortune cookies, add the food coloring at this point, stirring it into the batter. For example, I used 1/2 teaspoon green food coloring to make green fortune cookies.
5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.
6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).
7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.
