Torta Caprese - Flourless Chocolate Almond Cake
Torta Caprese is a traditional cake of the beautiful island of Capri from Italy. It is a dense, moist flourless chocolate cake enriched with ground almonds that bring a great flavor and texture. Also as no flour is used makes this dessert a perfect choice for those in search of gluten-free dessers.

7 oz (200g) semisweet chocolate
2/3 cup (150g) butter
3/4 cup (150g) sugar, divided
4 eggs
1/4 tsp (1g) salt
1. Grease and line with parchment paper a 8 or 9 inch (20-23 cm) springform pan (with a removable base). Preheat oven to 180°C (350°F).
2. Place the peeled almonds into a food processor and process until finely ground but with still some remaining chunky pieces for a crunch texture

5. Mix yolks with ½ cup (100g) sugar and salt until thick and pale yellow colored.

7. Whip egg whites until foamy using a mixer. Gradually add ¼ cup (50g) sugar and whip until stiff peaks form. Gently fold the whipped whites into chocolate mixture.
8. Pour batter into prepared pan and bake for 30-40 minutes until a toothpick inserted into the center comes out with few crumbs attached
9. Let it cool completely in the pan over a cooling rack.
10. When cooled invert onto a serving platter and dust with powdered sugar.
11. Serve if desired with whipped cream and fresh berries.

Chocolate Almond Torte Recipe Demonstration - Joyofbaking.com
Recipe here:
Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Chocolate Almond Torte. I find myself making this Chocolate Almond Torte when I crave chocolate. I love this chocolate cake's moist texture and its rich chocolate flavor. What you may find unique is that ground almonds are used instead of flour in this cake. The ground almonds add a subtle almond flavor as well as a pleasant coarseness to the torte's texture.

Chocolate Almond Hand Pies
RECIPE COURTESY OF BEV WEIDNER
Level: Easy
Total: 1 hr 5 min (includes cooling time)
Active: 25 min
Yield: 8 hand pies
Ingredients
One 14.1-ounce box of 2 pie crusts
All-purpose flour, for dusting
3 ounces cream cheese (a little under half a block), at room temperature
1 cup semisweet chocolate chips
3 tablespoons unsalted butter, melted
One 2-ounce package sliced almonds
2 teaspoons turbinado sugar
Directions
Preheat the oven to 350 degrees F.
Roll out one pie crust on a work surface lightly dusted with flour and cut into 4 equal wedges with a pizza cutter or knife. Spread 2 teaspoons of cream cheese over each piece, leaving about 1/2 inch bare around the edges. Sprinkle 2 tablespoons chocolate chips over the cream cheese and gently fold the crust over, creating a triangular hand pie. Using a fork, press the edges to seal, and place the pies on a large ungreased baking sheet. Repeat the process with the remaining crust.
Brush the butter over each hand pie and lightly press the sliced almonds into the tops of the hand pies in a single layer. Brush the almonds with a little bit of melted butter and lightly sprinkle the turbinado sugar over each hand pie.
Bake until the tops are golden brown, 25 to 35 minutes. Let rest a couple of minutes and serve warm or at room temperature.
