Tiny House Cooking - Chocolate Applesauce Cake
Easy moist chocolate cake! My version is gluten free, though it's easy to make with wheat flour as well.
Chocolate Applesauce Cake
1/2 cup butter
1 1/2 cups sugar
2 eggs
2 cups applesauce
2 cups flour
2 T. cocoa powder
1 1/2 t. baking soda
1/2 t. salt
Topping:
1 cup chocolate chips
1/2 cups nuts
2 T. sugar
Bake in a 9x13 pan at 350 for 35-40 minutes.

I split my own wood for heat, carry my water by hand, and attempt to grow as much of my own food as I can between the weather and wildlife here. I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.
I live in a somewhat harsh and cold climate, but enjoy the stunning sceanery and wildlife that I am surrounded by on a daily basis. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

AppleSauce Chocolate Chip Cake
Making a pound cake with Applesauce I have heard will make it really moist...let's see if that's true!
Ingredients:
1/2 cup butter, softened
1 cup sugar
1 egg
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 1/4 tsp cinnamon
2 cups of applesauce
1 cup chocolate chips
1 tsp vanilla
Cream together butter and sugar. Sift together and add flour, baking soda, salt and cinnamon. Mix with butter and sugar mixture, mix in applesauce, egg and vanilla. Fold in chocolate chips.
Bake at 350 degrees for 60 - 70 minutes.

●300g caster sugar
●2 eggs
●2 teaspoons vanilla extract
●500g unsweetened apple sauce
●170g plain chocolate chips

A moist applesauce cake recipe spiced with cloves, nutmeg, cinnamon, and frosted with cream cheese frosting and a salted caramel drip.

3 oz (85 g) vegetable oil
1 large egg (room temperature)
10 oz (283 g) cake flour
1 tsp baking soda
1/8 tsp cloves
1/4 tsp nutmeg
1/4 tsp ground ginger
1 1/2 tsp cinnamon

12 oz (340 g) applesauce (unsweetened)

Cream Cheese Frosting
16 oz (454 g) cream cheese (softened)
8 oz (227 g) unsalted butter (softened)
1 tsp vanilla extract (you could also use lemon or orange)

36 oz (1020 g) powdered sugar
