How To make Chocolate Coconut Chewy Cookies
1 cn Sweetened condensed milk;
-(14 oz) 3 oz Unsweetened chocolate
2 c Shredded coconut
1 c Pecan pieces
1 ts Vanilla
1 ds Salt
Almost a candy, these are chewy, not too sweet but very chocolaty. Preheat the oven to 300F. Grease cookie sheets very well. Heat the sweetened condensed milk and the chocolate together in a small pot over simmering water until the chocolate has melted. Remove from the heat and stir in the coconut, pecans, vanilla and salt. Arrange by teaspoonfuls on the cookie sheets and bake for about 15 minutes, taking care that the bottoms do not burn. Makes 40. -----

Chewy Coconut Cookies Recipe
Chewy coconut cookies are super soft and are packed with shredded coconut. These chewy coconut cookies are very easy to make, and you can always add chocolate chips, nuts, or even extra shredded coconut. If you are a fan of coconut like I am, definitely gives these chewy coconut cookies a try!
Ingredients
1 1/4 cups all-purpose flour
1/8 tsp salt
1/2 cup unsalted butter
1/2 tsp baking soda
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg
1/2 tsp vanilla extract
1 1/2 cups shredded coconut
Directions
1. In a large bowl, add all-purpose flour, baking soda, and salt. Whisk these ingredients together and then set this bowl aside.
2. Using a hand or stand mixer, cream the butter until smooth. Add in the light brown sugar and granulated sugar and continue mixing. Add in the egg and vanilla extract and continue mixing until the batter is light and fluffy.
3. Start adding a small portion of the all-purpose flour mixture to the butter mixture and continue mixing until the ingredients are combined. Add the remainder of the flour mixture and mix until combined. Add the shredded coconut and pulse the stand mixer for a few seconds or fold the coconut in using a spatula.
4. Roll or scoop the dough into balls and evenly spread out on a cookie tray lined with parchment paper. Bake in a 350°F preheated oven and bake for around 8-10 minutes until the edges start to turn a light brown.

For today's recipe I'll be showing you how to make my new favourite easy cookie recipe; homemade chewy coconut cookies! Follow along with this easy step-by-step coconut cookie recipe and learn how to make these delicious chewy coconut cookies that are the perfect mix of a soft, tender sugar cookie and a chewy coconut macaroon!
A couple months back I discovered this awesome chewy coconut cookie recipe, they were delicious, and I went a little coconut crazy. (I have a couple of other coconut recipes to share with you soon!)I was inspired to create a chewy coconut cookies recipe with more of a sugar cookie texture and a little less coconut texture. After a few failed attempts, this is now my go to cookie recipe for homemade coconut cookies! I hope you enjoy these cookies as much as I do!
Chewy Coconut Cookie Recipe:
Ingredients:
1/2 cup butter (softened)
1/3 cup packed brown sugar
1/2 cup white granulated sugar
1/2 teaspoon coconut extract
1 large egg
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1 + 1/4 cup all purpose flour
1 + 1/4 cup shredded coconut
Directions:
Preheat your oven to 350F/175C. Line cookie sheets with parchment paper. In a medium bowl combine flour, salt and baking powder. Whisk until combined. In the bowl of a stand mixer, fitted with the paddle attachment (or in a large bowl if using a hand mixer) cream room temperature butter until soft and creamy. Add both brown and white sugar and mix on low until well incorporated, around 2 minutes. Add the egg and coconut extract and continue mixing on low until the mixture is light in texture and pale in colour. Gradually add in the dry mixture, mixing between each addition. Lastly add the shredded coconut and mix until just combined. Using a 1.5 Tbs cookie scoop or a rounded heaping tablespoon drop the cookies onto the parchment lined sheets. Bake for 7-9 minutes, removing as soon as the bottoms are golden brown. Allow the cookies to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely!

These Chocolate Cookies by themselves are so soft, chewy, and chocolaty, and the coconut filling is very goey and the whole combination is really delicious! It's easy to make the recipe. The chocolate outside doesn't only look nice but it makes the cookies more flavorful and chewy and keeps the cookies soft and delicious for the longest time. You can save them at room temperature in an airtight cookie jar or in the fridge if it's too hot for the chocolate! But they taste the best in-room temperature! I hope you enjoy this recipe!

200g Flour | 1 +2/3 Cup
35g Unsweetened Cocoa Powder | 1/3 Cup
100g Icing Sugar | 1Cup
1tsp Salt
