Mini Baileys Chocolate Cheesecakes
They might be small, but they're bursting with chocolate-y, creamy flavor. We're hooked.

INGREDIENTS
FOR THE CRUST
Cooking spray
12 chocolate sandwich cookies, crushed
2 tbsp. melted butter
Pinch kosher salt
FOR THE CHEESECAKE
12 oz. cream cheese, softened
2 large eggs
1/3 c. granulated sugar
1/4 c. Baileys Original Irish Cream
1/4 c. sour cream
1 1/2 tbsp. all-purpose flour, divided
1/2 tsp. pure vanilla extract
Pinch kosher salt
1/2 c. mini chocolate chips
FOR GARNISH
Whipped cream
Chocolate sauce
Mini chocolate chips
DIRECTIONS
Preheat oven to 325º and line a 12-cup muffin tin with paper liners. Spray liners with cooking spray. In a large bowl, combine crushed chocolate sandwich cookies, melted butter, and a pinch of salt and stir until completely combined. Press chocolate cookies mixture into paper liners and set aside.
In a large bowl, beat cream cheese until light and fluffy, then add eggs and sugar and beat until smooth. Add Baileys, sour cream, 1 tablespoon flour, vanilla, and a pinch of salt and beat until combined.
In a medium bowl, toss mini chocolate chips with remaining 1/2 tablespoon flour, then fold into cheesecake batter and spoon over chocolate sandwich cookie crusts.
Bake until centers are almost set, about 20 minutes. They may jiggle slightly in the center. Let cool for 30 minutes at room temperature, then refrigerate until set, about 2 hours.
Remove cheesecakes from muffin pan and discard paper liners. Top with whipped cream, drizzle with chocolate sauce, and sprinkle with mini chocolate chips.

1/2 teaspoons salt
2 large eggs
1/2 tablespoon vanilla extract
1/2 cup sour cream
1 cup Baileys or Irish Cream
►Baileys Chocolate Ganache:
12 ounces semi-sweet chocolate
1 cup heavy cream
1 tablespoon corn syrup
1/4 cup Baileys
►Baileys Chocolate Whipped Cream:
2 cups whipped cream
1/4 cup Baileys
1/4 cup sugar
2 tablespoons cocoa powder

Baileys Cheesecake | Delish
Whether or not you're celebrating St. Patty's Day, you deserve this fudgy cheesecake.
DIRECTIONS
1. Preheat oven to 325º and butter an 8 or 9 springform pan.
2. Make crust: In a food processor, blend Oreos with melted butter and salt. Pat into a springform pan and set aside while you make filling.
3. Make cheesecake: In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add Baileys and vanilla.
4. Pour batter into crust and place on a large baking sheet.
5. Bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Let cheesecake cool in oven 1 hour, then refrigerate until completely cool, at least 4 hours and up to overnight. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed.)
6. When ready to serve, make ganache: In a small saucepan over low heat, heat heavy cream. Place chocolate in a heat-proof bowl and pour over hot heavy cream. Let sit 3 minutes, then stir until creamy and no lumps remain. Refrigerate ganache until slightly thick, 15 minutes and spread all over cheesecake. Let set 10 minutes, then serve.

Learn how to make a no-bake Baileys chocolate cheesecake with my easy recipe. After being sent Hummingbird Bakery's Bailey's collaboration cheesecake a couple of months ago and sharing it with the folks, my dad asked me if I could dupe it for his birthday. No problem!
Or at least, that was until it happened to reach 31°C in my flat on the day I was due to bake it. So I decided to make it a no-bake cheesecake instead to save myself and Mr Tashcakes from cooking ourselves in the process. It turned out delicious.
