Peanut Butter Balls
There's something special about simple ingredients that turn into a decadent treat. That's exactly what happens with these peanut butter balls made from smooth peanut butter, rice cereal, and chocolate. These are perfect for the holidays!

INGREDIENTS
- 2 cups peanut butter
- 1/2 cup butter, melted and slightly cooled
- 1 1/2 tsp vanilla extract
- 3 1/2 cups powdered sugar
- 3 cups rice cereal
- 1 lb bittersweet chocolate
INSTRUCTIONS
In a large bowl, combine the peanut butter and melted butter. Stir until combined and smooth. Stir in the vanilla and powdered sugar. Mix until incorporated. Add in the rice cereal and combine until evenly mixed.
Using a 1 tbsp-size cookie scoop, make the balls. Roll in hands to create smooth, even balls and set on a parchment-lined baking sheet. Once all balls are made, set in the refrigerator to chill for 20 minutes.
While the balls are chilling, melt the chocolate with 1 tbsp of coconut oil in a bain-marie.
Once the chocolate and coconut oil are melted, remove the peanut butter balls from the refrigerator. One at a time, roll the balls in the melted chocolate, allowing the excess chocolate to drip off. Set the dipped balls back on the parchment paper and sprinkle with flaky salt. Cool for 10 minutes and enjoy.

Chocolate Peanut Butter Buckeye Pretzels
Have you ever tried a Buckeye candy? It's a ball of peanut butter fudge dipped into chocolate! Today I'm sandwiching this delicious candy between two crunchy pretzels for the ultimate sweet and salty treat!
Buckeye Pretzels
(full recipe, adapted from Glenda Piccioni)
1 c. peanut butter
2 Tbsp. butter, room temperature
1/2 c. powdered sugar
1/2 c. brown sugar
1 bag mini pretzels
12 oz. chocolate chips (semi-sweet or dark) OR chocolate almond bark
2 tsp. coconut oil (if using chocolate chips)
Add the peanut butter and butter to a mixing bowl. Beat together with an electric hand mixer until evenly incorporated. Add the powdered sugar and brown sugar. Mix until combined. Cover a cookie sheet with a silicone baking mat, parchment or wax paper. Spoon one rounded teaspoon of the peanut butter mixture onto a pretzel and sandwich with another pretzel. Repeat until all peanut butter filling is used up. Refrigerate for a few minutes while preparing the chocolate. Pour the chocolate chips and coconut oil into a heat safe bowl. Microwave in 30 second increments, stirring in between, until melted. Dip half of each pretzel sandwich into the melted chocolate and place back onto the cookie sheet. Refrigerate until chocolate solidifies. ENJOY!

Here is what you'll need!
NO-BAKE CRISPY CHOCOLATE PEANUT BUTTER BALLS
Servings: 40-50
INGREDIENTS
½ cup salted butter, softened
2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal
2 cups chocolate chunks (preferably dark), for coating
PREPARATION
In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
Using your hands, roll the mixture into approximately 40 1-inch balls. Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.
