How To Make Lemon Truffle Pie
Today I'm sharing a Lemon Truffle Pie that is a big crowed hit!
Recipe: 1 graham cracker or baked 9-inch pie shell 3 TBS cornstarch 1/3 cup sugar plus 1/4 cup sugar 1 1/2 cups water 5-6 TBS lemon juice Zest from 2 lemons 4 egg yolks, beaten 1 1/2 TBS butter 1 cup white chocolate chips 2 (8oz) packages cream cheese, room temperature 1 cup whipped cream
Mix cornstarch and 1/3 cup sugar in a medium saucepan: add water and stir. Stir in lemon juice and lemon zest. In a separate bowl beat egg yolks with a fork: and 1/4 cup sugar and mix well. Add this mixture to the first and whisk together. Cook on medium heat, stirring constantly until the mixture boils for one minute.
Remove from heat; add butter and stir until melted. Remove 1 1/2 cups of liquid and reserve for the top layer Add white chocolate chips to the remaining liquid and stir until they are melted and mixed in well. Cut the cream cheese in small cubes and add to the white chocolate mixture. Stir until well mixed and smooth.
Pour the mixture into a baked 9-inch pie shell or a graham cracker crust. Pour the reserved lemon sauce on top and chill for at least 2 hours. Spread whipped cream over lemon filling.

No Bake Chocolate Truffle Pie
This easy no bake pie, is delicious and perfect for any occasion.
Add chocolate chips and 3/4 cup cream to a microwave safe bowl and cook on High for 1 to 2 minutes, stirring every 30 seconds, until smooth. Cool to room temperature. Stir in sugar and vanilla extract. Set aside.
In a bowl, whip remaining 3/4 cup cream until soft peaks form. Beat in chocolate mixture on High speed 1/3 at a time until well mixed. Spoon filling into the pie crust. Refrigerate for at least 8 hours before serving so flavors can develop.
