1/2 c Flour
1 t Baking powder
1/2 ts Baking soda
1 t Sugar
1/4 ts Salt
1/3 c Cornmeal
1 Egg
-or- 2 Egg whites
1 c Buttermilk
-or- Fresh plain yogurt 2 tb Vegetable oil
1 c Corn kernels
cooked and drained 1/4 c Mild chiles, roasted
:
chopped, peeled, & seeded 1/4 c Fresh cilantro, chopped
1/3 c Scallions, chopped
Vegetable oil Mild salsa Sour cream
In large bowl, sift together the flour, baking powder, baking soda, sugar and salt. Stir in cornmeal. In another bowl, lightly beat egg or egg whites, add buttermilk, oil, corn, chiles, cilantro and scallions. Add to dry ingredients; stir until combined. Place a griddle or large skillet over medium-high heat. When hot, brush with oil, then drop batter by large tablespoonfuls onto griddle. Cook until tiny holes form on each pancake. 5.This recipe is a Mexican breakfast dish that is filling so can also be served for brunch or lunch. It combines the theory you have been learning on eggs and also on breakfast. This is the last practical homework task of year 7 and it will demonstrate the skills that you have learnt this year perfectly.
Ingredients – serves 2
For the pancakes
100g plain flour
1 tsp baking powder
1 free range egg
100ml semi skimmed milk
75g sweetcorn
Salt and pepper
1 tbsp vegetable oil
For the salsa
2 salad tomatoes
Small bunch coriander
½ chilli
¼ small red onion
½ lime
Salt and pepper
For the poached eggs
2 eggs
½ tbsp white wine vinegar
1. Prepare self and equipment. Sieve the flour and baking powder into a large mixing bowl. Crack the egg into a small mixing bowl and beat with a fork.
2. Add the egg and milk to the flour mixture and whisk until it forms a thick batter. Add the sweetcorn and salt and pepper and mix.
3. Prepare the salsa, chop the tomatoes and coriander, and put into a small mixing bowl. Remove the seeds from the chilli and then slice and dice and add to the bowl.
4. Dice the red onion and juice the lime, add to the salsa mixture and season with salt and pepper and mix well. Put to one side.
5. Carefully heat the oil in a frying pan on a medium heat. Add a spoonful of batter to the pan and form into a small circle. Cook for 1 – 2 minutes on each side, or until the pancake is golden-brown on both sides. Repeat with the rest of the batter.
6. For the poached eggs, bring a small saucepan of water to the boil and add the vinegar. Turn down the heat so the water is simmering. Crack the eggs into the water and poach for 3 – 4 minutes and then carefully remove with a slotted spoon and drain on kitchen paper.
7. To serve, put two pancakes on each plate, add half the salsa to each and finish with a poached egg on top.

Ingredients
Boiled Corn Kernels - 1 cup (250 ml)
Onion - 1/2 cup
Chopped Garlic - 1 Tsp
Chopped Coriander Leaves
Juice of 1/2 Lemon
Maida - 1/4 cup
Salt - 1 Tsp
Pepper
Italian Seasoning - 1 Tsp
Chili Flakes - 1 Tsp
Mozzarella Cheese - 50 gms
Milk
Butter

Method
In a bowl, add the boiled corn kernels, onions, garlic, coriander leaves, lemon juice, maida, salt, pepper, italian seasoning, red chili flakes, mozzarella cheese
Mix everything well
Add some milk and combine everything together
The corn fritter mixture is ready
Heat a pan with some butter
Scoop some mixture and drop it onto the pan, press it and cook on both sides
Flip the corn fritter and cook evenly
Remove it from the pan and serve it hot

Cheddar Corn Fritters
Serves: 12
INGREDIENTS
1 ½ cups flour
2 cups corn (or one 15 ounce can)
½ cup cheddar cheese, shredded
⅓ cup chives, chopped
½ cup milk
2 eggs
1 teaspoon salt
1 tablespoon chili powder
½ cup oil, for frying
PREPARATION
In a large bowl, mix the ingredients.
In a large skillet, heat a half cup of oil (or until entire skillet is covered with a thin layer) over medium-high heat.
Spoon 2 tablespoons of mixture to form each fritter into the hot oil.
Flip after about a minute and a half or when you can see the edges beginning to brown. Repeat for other side.
Serve with a dollop of sour cream and chives.

INGREDIENTS
Water - 500 milliliters
Sweet corns - 250 grams
Green chili - 2
Water - 150 milliliters
Semolina - 2 teaspoons
Maize flour - 2 teaspoons
Salt - 1 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Turmeric - 1/8 teaspoon
Coriander - 1 teaspoon
Curry leaves - 1 teaspoon
Baking soda - 1/4 teaspoon
Oil - for frying
PREPARATION
1. Boil 500 milliliters water, 250 grams sweet corns and bring it to a boil.
2. Now, In a blender, add boiled sweet corns, 2 green chili, 150 milliliters water and blend it a smooth paste.
3. In a mixing bowl, add blended mixture, 2 teaspoons semolina, 2 teaspoons maize flour, 1 teaspoon salt, 1/2 teaspoon red chili , 1/2 teaspoon coriander powder, 1/8 teaspoon turmeric, 1 teaspoon coriander, 1 teaspoon curry leaves and mix it well.
4. Rest for 10 minutes.
5. Then, add 1/4 teaspoon baking soda and mix it well.
6. Heat some oil in a pan, pour the prepared mixture onto it and cook both sides till golden.
7. Garnish with coriander.
8. Serve with ketchup.
