How To make Cinnamon Topped Mini Muffins
1 1/2 Cups flour
1/2 Cup sugar
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Ground Allspice
1 Egg
lightly beaten
1/2 Cup Skim Milk
1/3 Cup Butter :
melted
Topping: 2 Tablespoons Sugar
1/2 Teaspoon Ground Cinnamon
1/4 Cup Butter -- melted
In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice. Combine the egg, milk, and butter; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper lined mini muffin cups. Bake at 400 degrees for 12-14 minutes or until muffins test done. For topping, combine sugar and cinnamon. Brush the tops of warm muffins with butter; sprinkle with cinnamon-sugar. Nutritional Information: 96 calories, 128 mg. sodium, 9 mg. cholesterol, 12 gm. carbohydrates, 1 gm. protein, 5 gm. fat. Cinnamon Muffins
INGREDIENTS1 cup granulated sugar 3 tbsp granulated sugar 1 cup all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 2/3 cup buttermilk 1 tsp pure vanilla extract 1 tsp finely grated orange zest 1 stick melted butter 2 tbsp melted butter 1 large egg 2 tsp ground cinnamon
METHOD
Grease a mini muffin tin with cooking spray.
Whisk 3 tbsp of the sugar, flour, baking powder, baking soda and salt together in a medium bowl.
In another bowl, whisk together the buttermilk, vanilla, orange zest, 2 tbsp melted butter and egg until combined.
Add the wet ingredients to the dry ingredients and mix well.
Spoon the batter into the mini muffin tin and bake for 10 to 12 minutes at 350°F/180°C.
Mix together 1 cup sugar with cinnamon.
Brush the muffin with melted butter and roll in the cinnamon sugar.

All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese

CINNAMON SUGAR MUFFINS
Ingredients
For the muffins:
• 1 1/4 cups all purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/4 cup granulated sugar
• 1/4 cup brown sugar
• 1/2 cup milk
• 1/4 cup vegetable oil
• 1 egg
Cinnamon Sugar Topping:
• 1/4 cup granulated sugar
• 2 teaspoons ground cinnamon
Instructions
• Preheat your oven to 350 degrees Fahrenheit and prepare a muffin tin with paper liners, enough for 8 muffins.
• Add the flour, baking powder, salt, and sugars to a large bowl and whisk together to combine.
• Measure the milk and vegetable oil into a large measuring cup, adding the egg and whisking until all the wet ingredients are combined.
• Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain.
• Combine the sugar and cinnamon for the cinnamon sugar topping.
• Add one tablespoon of muffin batter to each of the 8 muffin cups. Top with a sprinkle of the cinnamon sugar.
• Add another tablespoon of batter and some more cinnamon sugar. Repeat until the muffin cups are about 3/4 full and top the muffins with the remaining cinnamon sugar.
• Bake at 350 degrees Fahrenheit for about 20 to 25 minutes or until the tops of the muffins are golden brown and a toothpick inserted into one of the muffins comes out clean.
• Let the muffins cool completely in their tins before enjoying.

INGREDIENTS
1 cup all-purpose flour
1/4 cup coconut sugar
2 tsp baking powder
1 tsp salt
1/4 cup milk of choice
1/2 cup applesauce
1/4 cup coconut oil
1 Tbsp maple syrup
For muffin topping:
1 Tbsp coconut sugar
1 tsp cinnamon
DIRECTIONS
1. Add dry ingredients into mixing bowl and whisk until combined
2. Pour liquid ingredients into BlendJet and blend for 1 cycle
3. Pour blended liquid into the mixing bowl and whisk together dry and wet ingredients together
4. Fill muffin liners with batter and bake for 15-20 minutes on 400F
5. While muffins are baking, make a coconut sugar and cinnamon mixture
6. Dip muffin tops into melted butter of choice and roll muffins in cinnamon sugar
7. Serve and enjoy!
