3-Minute Chicken with Charred Tomatoes | Big Little Recipes
Yes, you can cook chicken in three minutes—and you should. By butterflying and pounding the breasts, this ingredient becomes not only weeknight-speedy, but concentrated in flavor and oversized in surface area, perfect for piling with toppings. We like broiled tomatoes, which become juicy and jammy, tossed with creamy burrata and fresh mint. But the options are endless. GET THE RECIPE ►►
INGREDIENTS
1 pint cherry tomatoes
4 tablespoons extra-virgin olive oil, divided
1 ¼ teaspoons kosher salt, divided, plus more to taste
1 teaspoon freshly ground black pepper
2 chicken breasts
1/3 cup mint leaves, roughly chopped
2 tablespoons canola oil
4 ounces burrata

Lemon sun-dried tomato chicken pasta ???? #glutenfree #easyrecipe #cookwithme #easydinner
Sundays are for pasta ???? this is so easy requires minimal ingredients & it’s pretty hard to mess up. For this recipe I used a pack of chicken tenderloins, @jovial brown rice pasta, an 18oz jar of sundried tomatoes, a lemon and of course salt pepper garlic powder. I made a salad to go with. First boil your water for pasta. Next make your dressing by draining your sundried tomatoes - use two tablespoons of the oil from the tomatoes, a juice of one lemon, salt pepper and garlic powder (measure with your heart). Shake it up and that’s done. Next cut your chicken into bite sized pieces and season with salt and pepper. Cook until almost done & then add in your sundried tomatoes (I love them so I used the whole jar) cook for a couple minutes then add your spinach and cook until wilted. Once pasta is done combine, add your dressing & enjoy! #glutenfree #dairyfree #pastaislive #easyrecipe #yummyfood

Andy Makes Chicken and Tomato Stew | From the Test Kitchen | Bon Appétit
Join Andy Baraghani in the Bon Appétit Test Kitchen as he makes chicken and tomato stew with caramelized onions. Cooking lemon slices to almost-burnt adds a layer of complex flavor to this comforting dish. Cinnamon's sweet, earthy flavor tames tomatoes' juicy acidity. Apply this same thinking to other baking spices like nutmeg and cloves.

Flash-in-the-Pan Chicken with Burst Tomatoes | That Sounds So Good
A truly excellent boneless skinless chicken breast!
Despite their enduring popularity, boneless, skinless chicken breasts can be very disappointing.
People love that they're lean, but that’s exactly what makes them so bland and dry. But when they’re good, they are powerful change agents. Cooking them
almost all the way through on one side will result in a chewy crust and superlative browning, and
prevents the chicken from overcooking. If you go a tiny bit over, the bright and juicy tomato pan sauce
will camouflage your mistakes.
