Betty's Version of Rebecca Ruth Bourbon Balls

Betty's Version of Rebecca Ruth Bourbon Balls
1 pound box confectioner's sugar
½ cup butter, melted
½ cup bourbon whisky
6-oz. semi-sweet chocolate chips
pecan halves for topping
In a large bowl, combine 1 pound of confectioner's sugar, ½ cup melted butter, and ½ cup bourbon whisky. Stir until smooth. Refrigerate for about ½ hour, until workable with hands. With your hands, pinch off about a rounded teaspoonful of cold mixture and roll it into a ball. The ball can be up to 1-inch in diameter, but you should make all balls approximately the same size. Place the ball on a waxed paper lined pan, and continue making the balls until all of the mixture is used. Place the pan in the refrigerator or freezer, until balls are very cold, but not frozen. Melt 6-oz. semi-sweet chocolate chips in the top of a double boiler. (You may add ½-oz. paraffin to the chocolate, if desired.) When the chocolate is melted and the bourbon balls are cold and firm, use a toothpick to dip each ball into the melted chocolate. Swirl it around to completely cover the ball, and then remove it quickly and place it back on the waxed paper lined pan. Immediately place a pecan half on top of the chocolate dipped bourbon ball and press to set. Continue dipping until all bourbon balls are completed. You may leave the pecan off half of the bourbon ball for people who do not care for pecans. These are really delicious for a party or for a late-night snack. You may keep them at room temperature on serving day, but you should store them in the refrigerator or freezer for long-term storage. You can also place these in a decorative tin for a gift! Bourbon Balls Recipe – Easy and Delicious Desserts – North Texas Vegetable Gardening and Cooking
Ingredients
● 1 (12 oz) package vanilla wafers – finely crushed
● 5 Tbsp. of your favorite bourbon
● 1 (11.5 oz) package milk chocolate chips
● 1 (14 0z) can Sweetened Condensed Milk
● 3/4 cup chopped pecans or nuts
Directions
1. In a medium mixing bowl combine vanilla wafer crumbs and bourbon.
2. Melt chocolate chips in a heavy saucepan over low heat. Once melted, remove from heat and add milk.
3. Add crumb mixture gradually mixing well. Chill or let stand for 20 to 30 mins.
4. Shape into 1-inch balls and roll in the nuts. Store covered.
Note: After about 24 hours the flavors intensify. Freezes well.

Yield: 30 Bourbon Balls
Bourbon Balls Recipe
Ingredients:
Dough
2 cups pecans
2 cups crushed vanilla wafers (approximately 8 ounces)
¼ cup unsweetened Dutch-processed cocoa
2 cups confectioners’ sugar plus more for rolling
3 tablespoons light corn syrup
½ cup bourbon, such as Jack Daniel’s
Finishing
¼ cup cocoa powder
¾ cup confectioners’ sugar, divided
Rum ball variation
2½ cups vanilla wafer crumbs
1 cup finely ground nuts or shredded coconut
1 cup confectioners’ sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons light corn syrup
½ cup Meyers rum (light or dark) or your favorite brandy
Extra cocoa or finely ground instant coffee, for rolling
Directions:
First, Preheat oven to 325 degrees. Roast the pecans on a parchment-lined baking sheet pan. Bake for 3-5 minutes so they are nice and toasted.
Then, in a food process, process 44 vanilla wafers into crumbs. Add pecans to crushed wafers process until you get a fine powder. Transfer to a medium bowl.
I use this Bourbon from a distillery in Evanston Illinois. The underlying caramel notes are perfect for this bourbon balls recipe. And don't skimp on the bourbon!
I also use my private label vanilla - it's aged in a cognac barrel, with citrus, candies fruit notes and spices. It smells so good in here, The bourbon, chocolate and roasted pecans make the kitchen very aromatic.
Finish the balls: take 1 tablespoon full and roll them into a ball. Perfectly moistened by the bourbon.
Sift remaining ¼ cup cocoa with ¼ cup of remaining confectioners’ sugar in a large mixing bowl. Watch the video to see the mixture consistency.
Coat the bourbon balls in the cocoa-sugar mixture to coat.
