How To make Coconut Oatmeal Cake
1 c Rolled oats
1 1/4 c Boiling water
1 1/2 c All-purpose flour
1 ts Baking soda
1 ts Cinnamon
1/4 ts Nutmeg
1/2 ts Salt
4 oz Butter
1/2 c Sugar
1 c Brown sugar
2 Eggs
1 ts Vanilla
5 oz Butter
2/3 c Brown sugar
1/4 c Light cream
2/3 c Walnuts or pecans
1 c Coconut; shred, pack
CONFIT OF APPLES 1/2 c Unsalted butter
1 c Sugar
2 tb Brandy
2 ts Lemon juice
4 Granny Smith apples; peel,
-halve, core Place oats in a bowl. Add boiling water and let stand 20 minutes. Cream butter, sugar, then eggs and vanilla. Add rolled oats. Add dry ingredients. Bake at 350 for 40 minutes. Top with coconut topping and broil until golden brown. TOPPING-Cream butter then add sugar. Stir in cream, nuts and coconut. Garnish with apple confit and taffy apple. CONFIT OF APPLES-In a saute pan on medium, melt the butter then stir in the sugar. Simmer, stirring occasionally until it begins to turn golden brown and caramelized. Add brandy and lemon juice to the pan and simmer to incorporate. Place apples in caramel and cook slowly to caramelize and tenderize. Serve warm. Source: Bakers' Dozen, Gale Gand, TVFN. Grandma's Oatmeal Cake
Preheat Oven to 325
Prepare Oats.
Mix 1 1/2 cup boiling water and 1 cup quick oats in a bowl and set aside for at least 20 minutes.
In a large bowl mix together the following ingredients until creamy.
1 Cup Brown Sugar
1 Cup White Sugar
1/2 Cup Vegetable Shortening
2 Large Eggs
Once everything is nice and creamy, add in the oatmeal and mix thoroughly.
In another large bowl mix together the dry ingredients.
1 1/2 Cup All Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Cinnamon
Add the dry ingredients to the creamed oatmeal mixture.
Pour contents into a 9 or 10 greased and floured baking pan.
Bake in a 325 degree oven until it tests done, 30-45 minutes.
While the cake is baking, let's prepare the topping.
Topping Ingredients:
1/2 Cup Butter
1/2 Cup Brown Sugar
1/4 Cup Evaporated Milk
1 Cup Shredded Coconut
1 Cup of chopped nuts (Almonds, Walnuts, Pecans etc... your choice.)
1/2 teaspoon Vanilla
Melt butter and all remaining ingredients and mix together thoroughly. Return pan to heat source and keep warm until cake comes out of the oven.
Once the cake is done and pulled out of the oven, immediately top cake with the coconut topping and return cake to the oven under the broiler setting or the highest possible temperature. Watch carefully as you simply want to brown / toast the topping.
Once the topping is brown / toasted, remove from oven and cool.
Enjoy!

Grandma's Oatmeal Cake recipe with Brown Sugar Coconut Pecan Icing on Top. Broiled to perfection. Think... if an oatmeal cookie and a delicious cake had a baby...
1/2 cup oats
3/4 cup boiling water
1 teaspoon vanilla
Mix together ingredients and set aside for 10-20 minutes until thick.
1/4 cup lard (butter or shortening)
3/4 cup sugar
3/4 cup brown sugar
1 egg
1/2 teaspoon cinnamon
3/4 cup self rising flour
1/2 teaspoon salt
Mix together sugar and lard until combined. Add egg and mix again until smooth. Stir in oatmeal and mix. Fold in cinnamon, flour and salt with spatula until smooth. Grease a 9x9 baking dish and bake at 350 degrees for 30-35 minutes. Let cool before adding icing.
ICING
3 tablespoons butter
1/2 cup brown sugar
1/4 cup whipping cream
1/2 cup coconut
1/4 cup pecans, crushed
Melt butter and stir in sugar and cream until smooth. Remove from heat and stir in coconut and nuts. Pour over top of cake and place under broiler for 2-3 minutes, remove and let cool.

This recipe was born in hard times. It is a struggle food masterpiece. It has its own unique taste and texture. This is a recipe that you really must try.
I love the basic recipe with nothing added. The cream cheese frosting makes it much richer and sweeter. The chopped nuts really add a nice flavor, and the cranberries change both the flavor and texture. Bake in muffin pans for an excellent breakfast muffin. This would be the perfect end to a Sunday dinner. If you are looking for something different to take to your next church dinner or potluck you have found it.
