In preparation for Thanksgiving, I wanted to share with you my recipe and technique for a classic American Pecan Pie. Through trial and error, I managed to create a perfect pie with a buttery, flaky crust and a flavor that is delicious and balanced in sweetness and taste (not too sweet). Your family and friends will fall in love with it.
The recipe is designed for 9.5 inch pan.
Recipe
Pie Crust
1 ¾ cups (220g) all-purpose flour
½ tsp salt
2 Tbsp sugar
1 ½ sticks (12 tbsp or 170g) unsalted butter, cold
1 egg
1-2 Tbsp ice cold water
Pie Filling
½ stick (4 tbsp or 56g) unsalted butter
½ cup (90g) brown sugar, packed
1 cup light corn syrup or maple syrup
1 ½ cups (170g) pecans, coarsely chopped
2 cups (250g) halved pecans, for topping
4 eggs
¼ tsp salt
2 tsp vanilla extract
2 Tbsp brandy
