Today I will show you how to make an easy version of my Tamale Pie recipe. This is a delicious cornbread casserole with chile con carne and cheesy baked to perfection. This is gonna be good!

INGREDIENTS
1 lb lean ground meat of choice
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
8 oz Colby Jack cheese
8.5 oz box of Jiffy Cornbread Mix
1 large egg
1/3 cup milk
1 cup cheese
3 oz can green chiles
ENCHILADA RED SAUCE
3 Tbsp cooking oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp beef or chicken bouillon powder 2 cups water
salt and pepper to taste
Bake in an 8 x 12 buttered baking dish at 400° F for 25 to 30 minutes

Tex Mex Tamale Pie with Jiffy ~ Easy One Pot Tamale Pie Recipe
INGREDIENTS:
1 TO 1 1/2 pounds ground beef
1/4 cup salsa
1 small can red enchilada sauce
1 cup finely diced onion
1 cup finely diced bell pepper
1 small can green chilies
1/8 tsp. black pepper
3-4 cloves minced garlic
1 tsp. oregano
1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup grated cheese - cheddar or mix
chopped green onions
Topping:
1 box cornmuffin mix
1 egg
1/3 cup milk
1/4 cup corn
small seeded finely diced jalapeno
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium heat add ground beef and spread out.
While beef is still pink add salsa and enchilada sauce.
Cook, chop and stir until beef is broken up. Bring up to a simmer.
Add diced onions, bell peppers and green chilies. Stir to combine.
Add seasonings. Stir and cook for 5-10 minutes or until the liquid
reduces.
Add corn and stir to combine. Remove from heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.

Today I am recreating another version of Tamale Pie but EASY! Some of you have asked for a recipe utilizing Jiffy cornbread mix. This cornbread casserole is cheesy, moist, and savory. This is not a pie or tamales, but it is a tasty cornbread casserole bake. This is gonna be good!

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked

Recipe
1 lb. Hamburger meat
½ white onion diced
½ red bell pepper diced
¼ green bell pepper
2 cloves garlic chopped
2 Serrano peppers seeded and diced small
1 can Red Gold petite diced tomatoes any flavor
1 cup corn
1 ½ teaspoons salt
2 tablespoons ground chili powder
1 teaspoon cumin
1 cup broth I used bone broth
1 cup shredded cheddar cheese hold back ¼ cup for corn bread
In a medium skillet, brown the hamburger meat, add the salt cook about 3 minutes. Drain meat if necessary. Add remaining vegetables. Red bell peppers, green bell peppers, garlic and the serrano peppers. Sauté until translucent. About 3 minutes. Add the chili powder and cumin. Add tomatoes and broth. Let simmer about 10 minutes.
Corn bread topping
1- 6 oz package of Yellow cornbread mix, prepare according to package instructions. Add ¼ cup cheddar cheese.
In a 9-inch pie plate add the filling mixture top with the cheddar cheese. Then pour the corn bread mixture on top. Make sure to place pie plate on top of a cookie sheet. It might boil over a little.
Bake at 375° for 40 minutes. Let cook about 30 minutes then ready to serve and enjoy.

STEAMER POT
⭐️PORK TAMALES RECIPE
INGREDIENTS FOR SWEET CORN TAMALES
2 lbs (908 g) fresh sweet corn kernels (6 to 7 ears of corn)
1/3 cup (70 g) instant corn flour for masa dough
1/4 tsp salt
1/2 cup (125 mL) hot water
8 Tbsp (113 g) softened butter
1/2 cup (100 g) sugar
2 tsp (7 g) baking powder
2 tsp vanilla extract
20 to 25 cleaned corn husk leaves
INGREDIENTS FOR SAVORY CORN TAMALES
2 lbs (908 g) fresh sweet corn kernels (6 to 7 ears of corn)
1/3 cup (70g) instant corn flour for masa dough
1/4 tsp salt
1/2 cup (125 mL) hot water
1/2 cup (100 g) lard or butter softened
2 tsp baking powder
1/2 tsp salt
8 oz (227 g) shredded cheese of your choice
30 to 35 corn husk leaves
INSTRUCTIONS
- Cut the bottoms of 12 to 14 ears of sweet corn
- Remove the outer leaves / husk and clean the corn silk from the corn
- Reserve, rinse and clean corn husk leaves
- Clean and rinse corn
- Using the method of your choice, cut the corn kernels from the cobs of corn
- Divide the corn kernels if making 2 types of tamales
FOR SWEET TAMALES
- In a small bowl combine instant corn flour, salt and hot water
- Mix well and set aside
- In a blender or food processor add 2 lbs of corn kernels and puree well
- Now add softened butter, baking powder, sugar, vanilla, instant corn flour mixture/dough and blend well
- Add pureed corn masa mixture to a bowl, cover and refrigerate for 1 hour
ASSEMBLY
- Take a corn husk leaf, add 2 to 3 Tbsp of corn masa mixture in the center
- Fold the husk around the corn mixture and fold the bottom up to secure mixture inside the husk
- In a large 16 qt steamer pot add 2 1/2 quarts of water to the bottom
- Use some of the corn cobs, place them in the center of the pot and start stacking your assembled tamales around the centered cobs in an upright position
- Once you have assembled all tamales, add extra corn husks on top of the tamales, then cover with a tea cloth or towel and cover the pot with a lid
- Place the pot on the stove and turn on the heat to start boiling the water at the bottom of the steamer pot
- Once you can here the water simmer and boil, adjust the heat to keep a medium simmer
- Cook the tamales for 1 1/2 to 2 hours, cook time may vary
- Once tamales are cooked allow them to set in the pot for 30 minutes before removing
- After 30 minutes, carefully remove each tamal and place on a baking sheet to rest for an additional 30 to 45 minutes
FOR SAVORY TAMALES
