Couscous Salad | Healthy and Easy | Vegetables | Herbs
Couscous salad - I love couscous because it cooks in 5 minutes and you can add whatever vegetable, meat or fish that you want.
Couscous salad ingredients:
1 cup couscous
1 cup broth or water
3 lemons juiced, about ¼ cup
1 tsp salt
1 tsp ground black pepper
Parsley flat leaf - 2 tbsp
Cilantro - 2 tbsp
Mint - 2 tbsp
Red bell pepper - 1 diced
Red Onion - 1/2 diced
Cucumber - 1 diced
Add feta cheese or grilled salmon, grilled chicken for a heartier meal.

Ingredients
Couscous Salad:
1 1/2 cups (250 g) instant couscous
1 1/4 cups (300 ml) vegetable broth
3 small (140 g) bell peppers diced
2 medium (200 g) tomatoes diced
1 small (160 g) cucumber diced
1/2 bunch of parsley chopped
3 stalks spring onions sliced
1 (15 oz) can chickpeas drained and rinsed
Dressing:
2 Tbsp (40 g) tomato paste
2 Tbsp lemon juice
2 Tbsp vegetable broth
3 Tbsp olive oil
1 1/2 tsp maple syrup
1 1/2 tsp Ras el Hanout spice blend
Salt to taste
