Homemade Pizza Dough | Quick and easy recipe vs 72-hour fermented dough recipe
My pizza cravings were strong this weekend so I wanted to see if I could make a good pizza dough in the same time it normally takes me to cook dinner. I also made a 72-hour fermented pizza dough so I could cook them up at the same time and compare. 72-Hour Dough
- 470g type ‘00’ flour
- 14g sea salt
- 1g dry yeast
- 330g water
1. In a jar dissolve the salt and yeast in the water.
2. Then, in a large bowl pour your flour in and create a well in the middle. Pour in the water, yeast and salt mixture and, working from the centre out, start to bring the dough together. Once you have what looks like a shaggy mess, pour this onto a lightly dusted, clean bench and begin to knead until you have a nice smooth consistent dough.
3. Cover your dough and leave somewhere warm to bulk ferment until it has doubled in size. This will take anything from 6 to 10 hours depending on how active your yeast is and how warm the air temperature is.
4. Once it has doubled in size, get it back on the bench and fold in on itself two or three times and make into three even size dough balls. They should all be just over 270g each.
5. Roll each dough ball in on itself, using the back of your hand and the friction of the bench, pull towards yourself so they are nice and tight. Place in an airtight container and in the fridge for 24-72 hours.
6. Remove 1 hour before you need to cook.
1-Hour Dough

- 10g caster sugar
- 330g warm water
1. Turn your oven on the lowest setting it will go.
2. In a jar dissolve the salt, sugar and yeast in the water.
3. Then, in a large bowl pour your flour in and create a well in the middle, pour in the water, yeast and salt mixture and, working from the centre out, start to bring the dough together. Once you have what looks like a shaggy mess, pour this onto a lightly dusted, clean bench and begin to knead until you have a nice smooth, consistent dough.
4. Turn the oven off.
5. Cover the dough and leave it in the oven warm to bulk ferment until it has doubled in size. This will take anything from 30mins to 1 hour depending on how active your yeast is and how warm the oven temperature is.
6. Once it has doubled in size, get it back on the bench and fold in on itself two or three times and make into three even size dough balls. They should all be just over 270g each.
7. Roll each dough ball in on itself, using the back of your hand and the friction of the bench, pull towards yourself so they are nice and tight.
8. Cover in a damp towel and leave to rest for 30mins to 1 hour before you stretch to make your pizza.

Ingredients:
Prepare Dough:
-Khameer (Instant yeast) 2 & ½ tsp
-Bareek cheeni (Caster sugar) 2 tsp
-Warm water ¾ Cup
-Maida (All-purpose flour) sifted 3 & ½ Cups
-Namak (Salt) 1 & ½ tsp
-Cooking oil 2 tsp
-Warm water ¼ Cup or as required
-Cooking oil 1 tsp
Prepare Chicken:
-Cooking oil 2 tbs
-Chicken boneless cubes 250g
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Tikka masala 1 tbs
-Namak (Salt) ¼ tsp or to taste
-Lemon juice 1 tbs
Assembling:
-Cream cheese 2 tbs or as required
-Mozzarella cheese grated
-Dried oregano
-Pizza sauce 2 tbs or as required
-Pyaz (Onion) small cubes
-Black olives sliced
-Cherry tomatoes halved
-Fresh basil leaves
-Cheddar cheese grated
-Mozzarella cheese grated
-Dried oregano
Directions:
Prepare Dough:
-In a jug,add instant yeast,caster sugar,warm water and mix well,cover & let it proof for 5 minutes.
-In a bowl,add all-purpose flour,salt,cooking oil & mix well until it crumbles.
-Now add yeast mixture & mix well.
-Gradually add warm water & knead until dough is formed.
-Grease with cooking oil,cover & let it proof for 1 & ½ hour (warm place).
Prepare Chicken:
-In a frying pan,add cooking oil,chicken and mix well until it changes color.
-Add ginger garlic paste & mix well.
-Add tikka masala,salt,mix well & cook for 2-3 minutes.
-Add lemon juice and mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until dries up.
-Let it cool.
-Sprinkle dry flour and knead dough again until smooth.
-Take a small dough (150g) and make a ball,sprinkle dry flour & roll out with the help of rolling pin (11-inch round) and prick with fork.
-Heat griddle,place rolled dough and half cook both sides (1 minute each side) & set aside for later use.
-Take another dough (220g),sprinkle dry flour & rolled out with the help of rolling pin (12-inch round) and prick with fork.
Assembling:
-On rolled dough,add & spread cream cheese (leaving the sides around 1-inch).
-Add mozzarella cheese,dried oregano and prepared flat bread,apply water on the edges & get the sides closer & seal tight.
-Now transfer the dough on pizza rack,add & spread pizza sauce,prepared chicken,onion,black olives, cherry tomatoes,fresh basil leaves,cheddar cheese,mozzarella cheese & sprinkle dried oregano (makes 2-3 pizza).
-Bake in preheated oven at 200C for 10-12 minutes.
-Cut into slices & serve with 7Up.

-Bowl mein maida,amak aur cooking dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Ab yeast mixture dal ker ache tarhan mix ker lein.
-Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein.
-Cooking oil sa grease karein aur dhak ker 1 & ½ hour proof hunay kliya rakh dein (warm place).

-Frying pan mein cooking oil aur chicken dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Tikka masala aur namak dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Lemon juice dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Thnad ker lein.
-Maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
-Chota dough lein (150g) aur ball bana lein,miada chirak dein aur rolling pin ki madad sa bail lein (11-inch round) aur fork ki madad sa prick ker lein.
-Tawa garam karein aur rolled dough rakh ker dono sides sa half cook ker lein (1 minute each side) & bad mein use kernay kliya side per rakh dein.
-Ek aur dough lein (220g),miada chirak dein aur rolling pin ki madad sa bail lein (12-inch round) aur fork ki madad sa prick ker lein.
Assembling:
-Rolled dough per cream cheese dal ker pheela lein (leaving the sides around 1-inch).
-Mozzarella cheese aur dried oregano dal dein,tayyar flat bread rakh dein aur edges per pani laga lein aur sides ko close ker ka seal ker lein.
-Ab dough ko pizza rack per rakh dein,pizza sauce dal ker pheela lein,cooked chicken,black olives,cherry tomatoes,fresh basil leaves,cheddar cheese,mozzarella cheese & dried oregano chirak dein (makes 2-3 pizza).
-Preheated oven mein 200C per 10-12 minutes kliya bake ker lein.
-Slices mein cut lein aur 7up ka saath serve karein.
