Easy Cheesy Crock Pot Potatoes (Slow Cooker Potatoes)
The ingredient list for these Cheesy #SlowCookerPotatoes is going to look a little different than what you're used to and, for this reason, they're going to taste a whole lot better!
Why? Because we are going next level with that #cheesesauce, kicking condensed soups to the curb, and making a velvety smooth, addictively delicious sauce from scratch instead. This cheese sauce is so much better than anything you could get out of a can and so easy to make!
You might also know this dish as Slow Cooker #HashBrownCasserole. Whatever you decide to call it, you can't go wrong serving it to a crowd. Everyone loves #cheesypotatoes, especially the kids!

To make the sauce, you'll start by melting butter in a saucepan on the stovetop. Then, add some onion and cook it until softened. Add flour (this is your thickener), followed by the chicken broth. Add the chicken broth a splash at a time so it stays nice and smooth, and everything incorporates evenly. Last, you'll stir in the sour cream, salt, pepper, and of course, lots of shredded #Cheddarcheese! Freshly grated cheese is best!
The sauce may taste a little salty to you at first, but keep in mind, we're going to season a lot of potatoes with it! You'll need 1 1/2 (30-ounce) bags of frozen, diced hashbrown #potatoes.
Add your #hashbrownpotatoes to the #slowcooker and stir in the sauce. Set it on low and cook for 4-5 hours. Once the cook time is up, add more Cheddar cheese to the top, pop on the lid, and let it cook for about 15 minutes more until the cheese is nice and melty!

Easy Slow Cooker Scalloped Potatoes
Easy slow cooker scalloped potatoes recipe. Perfect scalloped potatoes for Thanksgiving, holidays, or any potluck.
How to make scalloped potatoes in a slow cooker
Ingredients
1 1/2 cups heavy cream or half and half
4 cloves garlic minced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/4 teaspoon nutmeg
2 pounds russet potatoes peeled and cut into 1/8-inch thick slices
Kosher salt and freshly ground black pepper to taste
1 cup shredded Gruyere cheese
1 cup shredded cheddar cheese
1/4 cup freshly grated Parmesan
1/2 teaspoon fresh rosemary
Chopped parsley
Instructions
In a medium saucepan over medium heat, whisk together heavy cream, garlic, thyme, rosemary, basil and nutmeg until heated through, about 1-2 minutes.
Next, add a layer of the sliced potatoes to a 4-qt slow cooker in an overlapping pattern and season with salt and pepper.
Pour 1/3 cup of the cream mixture over the potatoes and sprinkle some shredded Gruyere and cheddar cheese on top. Repeat with remaining potato slices, cream mixture, and Gruyere and cheddar cheese to create 2 more layers.
Cover and cook on high heat for 4-5 hours, or until the potatoes are tender.
Sprinkle parmesan cheese on top. Cover and cook again until melted, about 5-10 minutes.
Uncover and let potatoes rest for 15 minutes, before serving.
Garnish with chopped parsley and rosemary.

INGREDIENTS
1 1/2 pounds frozen cubed hashbrowns (about 2 12oz bags)
1 cup thick sour cream (like Daisy brand)
1 (10oz) can condensed cream of chicken soup
1/2 cup salted butter, melted
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
2 cups shredded sharp cheddar cheese
TOPPING
1/2 cup salted butter
2 cups crushed Corn Flakes cereal

This will be the easiest scalloped potatoes you will ever make! I HATE making a roux on the stovetop for scalloped potatoes. With my recipe, the sauce is made in a bowl!

INGREDIENTS:
1 lb. center cut bacon
5 russet potatoes (about 3 pounds)
4 oz. cream cheese
10.5 oz. can cream of chicken soup
1/2 cup salted butter melted
1 oz. ranch seasoning mix
1 Tbsp. minced garlic
1/2 tsp. black pepper
Optional topping:
4 oz. cheddar cheese shredded
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
Cook and chop bacon. Peel and thinly slice the potatoes.
Warm the cream cheese in the microwave for 30 seconds (in a small glass bowl). Softening it will help it blend into the other ingredients.
In a large mixing bowl, add cream cheese, cream of chicken soup, melted butter, ranch seasoning, minced garlic, and pepper. Whisk well to combine
Spray a light coating of non-stick cooking spray in the slow cooker. Arrange potato slices in the crock pot in a shingle pattern, slightly overlapping each potato. Top with ½ of the chopped bacon then, pour cream cheese mix over the potatoes and top with remaining bacon.
Cover and cook on high for 3.5 – 4 hours until tender. Keep the lid on until 3.5 hours to insure the potatoes cook and the heat doesn't escape.
Serve with a sprinkle of shredded cheddar cheese on top if desired. Enjoy!
