Slow Cooker Lemon Pepper Chicken
SLOW COOKER LEMON PEPPER CHICKEN
This is one of my first recipes on my blog that I had time to make a video of. The slow cooking makes the chicken tender and with the help of the oven broiler the skin is browned. I hope you enjoy this recipe!
RECIPE:
INGREDIENTS:
1/4 cup lemon juice about 1 very large lemon
3 Tbsp. extra virgin olive oil
1 garlic clove minced
½ tsp. dried oregano
½ tsp. sea salt
¼ tsp. pepper
2.5 lbs. chicken thighs bone-in, skin left on- just enough thighs to cover the bottom of the slow cooker.
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Add the lemon juice, olive oil, garlic, oregano, salt and pepper to a 5-quart or larger slow cooker and stir. Add the chicken thighs into the sauce one at a time skin down and swish around in the sauce, then flip the thigh skin up, do this with all the thighs. (There will be just enough sauce to coat the chicken)
Cover and cook on HIGH for 4 hours.
After cooking time is done, preheat the oven to broil (500 degrees).
Cover a baking sheet with foil. Using tongs remove the chicken thighs from the slow cooker onto the baking sheet.
Place the chicken into the oven on top rack (My top rack was 2 levels down). Broil the chicken thighs for about 10 minutes, or until golden brown. Keep an eye on them, so they won't burn.
If you want to use the sauce from the slow cooker (it's fantastic!) Blot the sauce with a paper towel to remove the grease.
Serve and enjoy!

EASY Crockpot Lemon Chicken
Slow-Cooked Lemon Chicken in a crockpot is the perfect meal to make in the morning and have it ready when you come home after a long day’s work. This Slow Cook makes the Chicken tender, and the lemon gives the chicken a great flavor. Add Couscous for a simple and tasty side dish.
4 - 6 Chicken Breast or Chicken Thighs
1 small Onion, sliced
2 cloves Garlic, minced
1 Lemon, Juice
2 Tablespoons Olive Oil
1 teaspoon Italian Herbs
1 teaspoon Salt
½ teaspoon Pepper
½ cup Couscous
¼ Water or Chicken Broth
2 Tablespoons Butter
Parsley, garnish
Lemon Slices, garnish
1. Place all the ingredients into the slow cooker and mix to thoroughly combine the seasoning.
2. Cover and cook on low for 5-6 hours or set to the appropriate cook time.
3. Optional, when chicken is cooked, put the chicken on a baking sheet and place in the oven on broil to brown the chicken for about 5 minutes depending on your oven.
4. In the crockpot, add Couscous, Water, and Butter. Mix to combine and cover and let sit until chicken is golden brown.
5. At this point, the chicken can rest in the crockpot to keep warm or serve immediately.
6. Garnish with Parsley and Lemons.
Note: This recipe can be easily adapted to Instant Pot or Stock Pot over low heat on the stove.

Here's a healthy, effortless recipe for a whole chicken, slow-cooked in the crockpot with lemons, garlic, and herbs until it's juicy and full of zesty flavor.

Slow Cooker Lemon Chicken - One Pot, Two Meals
Each meal = 4 hearty servings
Total cost both meals = $8.00
Total per serving = $1.00
Ingredients:
2 large chicken breasts, sliced into 6-8 pieces each $2.50
1 can of cream of chicken soup $1.00
4 cups chicken broth $1.25
2 tablespoons dry minced onion $.25
Salt & pepper to taste $.25
2 lemons, zested & juiced $.50
1 package instant mashed potatoes $1.00
1 bag frozen mixed vegetables $1.00
¼ cup instant rice $.25
Parsley for garnish, optional
Preparation Instructions:
Slice the chicken breasts into 6-8 slices each
In a large bowl whisk together the cream of chicken soup, 1 cup of chicken broth, minced onion, salt & pepper, lemon zest and juice until well combined
Stir in the sliced chicken breast
Pour into slow cooker and cook on low for 5 hours
Use a fork the shred the chicken
To serve over mashed potatoes:
Prepare the instant mashed potatoes per package directions and plate 4 equal size servings
Use half of the cooked, shredded chicken to top the mashed potatoes
Garnish with parsley, if desired, serve & enjoy!
To make the creamy soup:
To the second half of the cooked shredded chicken, stir in remaining 3 cups of chicken broth, frozen mixed vegetables, and ¼ cup of instant rice
Cook for an additional hour
Ladle 4 equal portions of soup into bowls, serve, and enjoy!
