How To make Decorated Spice Cookies
Spice-cookie dough: 4 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon each ground nutmeg and salt
1/4 teaspoon each ground allspice and cloves
1 1/2 cups butter or margarine, at room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
In a large bowl mix flour, cinnamon, ginger, nutmeg, salt, allspice and cloves until blended. In another large bowl beat butter and sugar with electric mixer until light and fluffy. Beat in egg and vanilla. Reduce mixer speed to low and gradually add flour mixture, beating until well blended. Divide dough in thirds. Shape each into a ball and flatten to a 1-inch-thick round. Wrap in plastic wrap and refrigerate 1 hour or until firm enough to roll. Heat oven to 375 degrees F. Have cookie sheets ready. On a lightly floured surface roll one third of the dough at a time (keep remainder refrigerated) to 1/4-inch thickness. Cut dough in desired shapes with floured 3-inch cookie cutters. Place 1 inch apart on ungreased cookie sheets. (Chill and reroll scraps.) Bake about 12 minutes or until cookies are golden on undersides and edges are just starting to brown. Cool completely on sheet on wire rack. Ice and decorate as desired. Let stand until icing hardens, about 2 hours

Pumpkin Spice Sugar Cookie Recipe - Easy Cookie Decorating Tutorial
These pumpkins spiced sugar cookies are full of vanilla and butter with a light rich cream cheese icing on top. They look as beautiful as they taste but are way easier to decorate than you would imagine.

PUMPKIN SPICE SUGAR COOKIES
.
2 3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons pumpkin spice
1 cup butter
3/4 c sugar
1 egg
1 tablespoon vanilla
Cream butter and sugar together well. Add egg and vanilla and beat until light and fluffy.
Whisk together dry ingredients and mix in butter mixture until fully incorporated.

Gather into a ball and flatten into a disc. Roll out between 2 pieces of parchment.
Freeze for 10 minutes.
Cut out cookies and bake for 11-15 minutes depending on your oven.

Cool completely before icing.
CREAM CHEESE BUTTERCREAM ICING
1/2 cup room temperature butter
3 ounces room temperature cream cheese
1 3/4 c powdered sugar
1/2 teaspoon vanilla
1 - 2 teaspoons milk
(This is a very light icing. For a sweeter, more traditional version add 1/2 cup powdered sugar.)

Pumpkin Pie Spice Sugar Cookies:
Ingredients:
• 2 cups (454 grams) unsalted butter, room temperature
• 1 cup (194 gram) granulated sugar
• 1 cup (187 grams) brown sugar. lightly packed
• 1/4 cup (66 grams) pumpkin purée or pumpkin pie filling
• 2 large eggs
• 3 teaspoons Pumpkin Pie Spice (see note)
• 1 tsp vanilla extract
• 5 cups all-purpose flour 754 grams
• 1 tsp salt
Directions:
1. Cream the butter and 2 sugars together in the bowl of an electric mixer on low to medium speed, using the paddle attachment. Mix until thoroughly for about one minute. Scrape down the sides of the bowl and mix again for a few seconds more. Over mixing the butter and sugar in this step will cause too much air to be incorporated into the dough. Which is good if you like a light and fluffy cookie. But for roll out sugar cookies this is not good, the dough will spread more during baking.
2. Add pumpkin purée and eggs while slowly mixing. Add vanilla extract and mix. Scrape down the bowl with at least once more and mix briefly again.
3. Sift your dry ingredients together. (Flour, pumpkin pie spice and salt.)
4. Add the flour mixture to the bowl in thirds, allowing to mix for about 30 seconds after each addition. Mix on low speed for 3o seconds. When the dough clumps around the paddle attachment it’s ready. It’s also important at this stage not to over mix the dough (glutens in the flour develop and the dough can become tough).
5. Roll the dough out between 2 large pieces of parchment paper. Place on a baking sheet and into the fridge for a minimum of 1 hour. or overnight.
6. Roll out the dough to about 1/4 thickness and cut out. Re-roll and repeat.
7. Place cookies on parchment paper-lined baking sheet.
8. Put cookies into the fridge for 10 - 15 minutes to chill again.
9. Preheat your oven to 350°F or 176°C.
10. Bake cookies for 12-15 minutes or until the edges become golden brown. The baking time will depend on the size and shape of your cookie. It is always best to start low on time and let in for a little more if they aren't done.
11. Let cookies cool to room temperature and decorate.

Note: If you don't have Pumpkin Pie Spice you can use
• 2 tsp ground cinnamon
• 1/2 tsp ground ginger
• 1/8 tsp ground nutmeg
• 1/2 tsp all-spice

220g burnt butter, liquid and cooled
280g soft light brown sugar
1 egg yolk
1 tsp vanilla
80g pumpkin purée
280g plain flour
1 tsp bicarbonate of soda
½ tsp baking powder
½ tsp salt
1 ½ tsp cinnamon
½ tsp ground ginger
½ grated nutmeg
Pinch of ground cloves
10-12 small pieces of dark chocolate
ITALIAN MERINGUE
220g caster sugar
20g glucose
75g water
60g egg white
Pinch salt
½ tsp vanilla

100-150g melted dark chocolate
