Slow Cooker Corned Beef with Maple Mustard Glaze

Corned beef with mustard maple glaze
Serves 8 Prep 15 mins
Cooking 4 hours 55 mins
1.5kg Coles Australian Corned Beef Silverside
¼ cup (60ml) malt vinegar
2 tbs brown sugar
2 dried bay leaves
1 garlic bulb, halved crossways
6 whole cloves
1 celery stick, thickly sliced
1 brown onion, cut into wedges
2 baby fennel, quartered
2 bunches Dutch carrots, peeled
6 small parsnips, peeled
2 small turnips, peeled, quartered
12 baby potatoes
¹⁄³ cup (80ml) maple syrup
2 tbs brown sugar, extra
1 tbs wholegrain mustard
1 tbs Dijon mustard
1 Place the beef in a slow cooker. Add vinegar, sugar, bay leaves, garlic bulb, cloves, celery, onion and fennel. Add enough cold water to just cover the beef. Cook for 4 hours on high (or 6 hours on low). Add carrots, parsnips, turnip and potatoes. Cook for a further 30 mins or until the vegetables are just tender.
2 Preheat oven to 200°C. Combine the maple syrup, extra sugar and combined mustard in a small bowl. Use tongs to transfer the beef from the poaching liquid to a roasting pan with the carrots, parsnips, turnip, fennel, garlic bulb and potatoes. Drizzle the mustard mixture over the beef and vegetables.
3 Roast, turning vegetables occasionally, for 20-25 mins or until beef is glazed and the vegetables are golden brown.

A great way to celebrate St. Patrick Day cooking a Brown Sugar and Mustard glazed Corn Beef Brisket in a 10 Dutch oven using briquettes.

Brown Sugar and Mustard Glazed Corned Beef Brisket
10” Dutch oven
Ingredients:
1. 1 3–4-pound Corned beef brisket
2. ½ cup Brown sugar
3. ½ cup Brown mustard
4. 1 bottle Dark Porter beer
Directions:
Rinse off the brisket with cold water.
Trim off excess fat.
Place in the Dutch oven and cover with water adding the seasoning packet. Put the lid on and simmer for 1 hour.
Remove the Dutch oven from the heat. Them take the brisket out placing on a plate. Discard the water.
Place the brisket back in the Dutch oven. Pour the beer over the brisket then put the lid back on simmering for another 1 ½ hours.
While the brisket is cooking mix together the brown sugar and mustard.
Take the lid off and brush the brisket with the glaze, put the lid on and increase the heat to 400 degrees cooking for another 30 minutes.
Start with 10 briquettes on top and 6 on the bottom adding more to top and bottom as needed. To increase to 400 degrees, add 6 on top and 2 on the bottom. This will set the glaze.
When done take the brisket out letting it rest for a few minutes then slice and enjoy.
This goes great with Irish Soda bread and cooked root vegetables.

This recipe is one of my favorites, the sticky bourbon-molasses glaze gives the meat an irresistible touch of sweetness that balances out the brine. And it is perfect to celebrate St. Patrick 's day!
Brining your own corned beef at home is easy, all you need is the right equipment and time, about 7 to 10 days—therefore thinking ahead is imperative. Beyond the pink salt, which can be found at a butcher shop or on Amazon, you probably have the spices in your cabinets already. If you buy a pre-brined brisket from the grocery store, skip the first step.
For an easy side dish, simmer vegetables like cabbage, potatoes, potatoes and carrots in the poaching broth while you glaze the corned beef.
