How To make Dried Cherry Biscotti
2 1/2 c All-purpose flour
1 c Granulated sugar
1/2 ts Baking soda
1/2 ts Baking powder
1/2 ts Salt
3 Eggs
1 ts Vanilla
2/3 c Dried cherries (less than a
-3-oz Package); chopped 1 c Ground almonds
Recipe by: St. Louis Post-Dispatch 3/31/97 Lightly grease a cookie sheet. Preheat oven to 350 degrees. Blend flour, sugar, baking soda, baking powder and salt. Add eggs and vanilla, beating until dough is formed. Stir in cherries and almonds. Turn the dough out on lightly floured surface and knead several times. Using the greased cookie sheet as a surface, divide the dough in half. Form into two flat logs, each about 9 inches long and 3 inches wide. Bake for 25 minutes or until lightly browned on top. Place baking sheet on a rack; let cool for 10 minutes. Lower heat to 325 degrees. On a cutting board, cut the logs on the diagonal into 1/2-inch-thick pieces. Put back into oven for 5 minutes, with cut side of cookies facing up. Turn cookies; bake 5 more minutes. Remove from cookie sheet; let cool on baking rack. Store in an airtight container. ALL INGREDIENTS AND QUANTITIES BELOW.
A simple and delicious recipe for cherry and dark chocolate biscotti, the super crunchy, twice baked Italian biscuit. ( with an Italian lesson thrown in)
Pre heat oven to 160 fan.
100g Golden caster sugar,
125g Plain flour,
1/4 Tsp Baking powder,
75g Chopped dried cherries,
75g Dark chocolate chips,
1 large egg.
100g Melted dark chocolate.
Bake for 30 mins, cool for 10 mins, slice, 20 min oven to finish.

Simple AND Delicious Biscotti Recipe
Easy Biscotti with Cranberries and Pistachios
This is a cranberry biscotti recipe that will blow your socks off! As you prepare for the holiday season try out this tasty and colorful treat to go with your cup of coffee. It's a cranberry and pistachio biscotti that you will enjoy with friends and family. This is the video that will show you how to make a holiday biscotti that you will be proud of.
Ingredients:
1/4 cup extra virgin olive oil
3/4 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 eggs
1 3/4 cup flour
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups shelled pistachios
Cream oil and sugar into a bowl.
Add extracts and beat in 2 eggs.
Mix dry ingredients (flour and baking powder) in a separate bowl and add slowly to your wet ingredients as you mix with a hand mixer.
Add cranberries and pistachios then mix with a spoon.
Cover and refrigerate about 30 minutes so that it is easy to form into a log before baking.
Bake for 30 minutes at 300℉, then cool for 10 minutes.
Slice into 1/2 inch slices, lay onto their sides on a baking sheet, and bake again for 8 minutes at 275℉.
Turn over and keep baking for 4 more minutes.
Cool and serve!

This biscotti recipe has been in my repertoire for years… so many years, in fact, that I can’t even remember when I came up with it. And, though I have countless versions of this recipe, this one is my husband’s favorite. So I end up making it more often than any of the others.
When it comes to the holidays, I often venture in baking dozens of these to give to family and friends – a labor of love for sure, but I think that efforts from our kitchens always make the best gifts.
Snappy But Not Rock-Hard - You Won't Break Your Teeth on These Biscotti!
The one thing I must mention, though, is that you’re not likely to break your teeth on one of these biscotti. They’re snappy for sure, but not rock-hard! I like my biscotti to be dry but delicate, and so the recipe has evolved to give me these exact results. A very dear friend, who now lives near Venice, calls them “biscotti for the elderly!” It’s a name that has stuck in my mind, and which he didn’t mean as an insult… quite the contrary. It just means that nibbling on them is that much more pleasurable.
So enjoy these super-tasty morsels. May they find their way into your holiday gift baskets.
