Cherry and Pistachio Biscotti | Christmas Cookies
The red cherries and green pistachios make for a festive cookie. You can combine whatever dried fruit and nuts you like to customize this recipe.

¼ cup (60ml) olive oil
¾ cup (70g) white sugar
2 teaspoons vanilla extract
2 eggs
1 1/2 (190g) cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
½ cup glace cherries
1 ½ cups (180g) pistachio nuts
note this makes two times the recipe shown in the video (enough for about 40 pieces)

Add the burst of red and green cherries to the original twice-baked Italian dessert with almonds. This dry snack can be served to family and friend as a post-meal treat or with coffee or tea. Our How-To video makes it easy to create.
Ingredients:
• 1 cup sugar
• ½ cup butter softened
• 1 teaspoon almond extract
• 1 teaspoon vanilla extract
• 2 eggs
• 3 ½ cups all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1 cup slivered almonds toasted
• 8 oz red or green candied cherries, chopped
Glaze:
• 1 ½ cups confectioner’s sugar
• 2 tablespoons water
• ½ teaspoon vanilla extract
Directions:
• Preheat oven at 350 F.
• In a mixing bowl, add sugar, butter, almond extract, vanilla and eggs. Beat uniformly combined. • • Then add all-purpose flour, baking powder and baking soda. Mix well. Add almonds & chopped candied green and red cherries.
• Gently knead 2 to 3 minutes or until dough holds together.
• Cut in two and shape each half into 10×3-inch rectangle with rounded corners.
• Bake at 350 F about 25 minutes or until the center of the dough is firm to the touch.
• Cool for 15 minutes, bias-cut with a serrated knife into ½-inch slices.
• Bake for 15 minutes or until crisp light browned.
• Cool completely. Top with glaze or other decorations as desired.
For glaze:
• Add all ingredients and mix until reach desired consistency, add more water if necessary.

Biscotti with Almonds, Cranberry, & Orange
This is another winning flavor combination for biscotti, and I’m sure you will enjoy it as much as my family does. The orange zest adds so much flavor to this and is a perfect complement to the craisins. Try this recipe with walnuts or pecans instead of almonds for a different flavor variation.
Ingredients
• 1 cup sugar
• ½ cup neutral oil
• 3 eggs
• 1 teaspoon vanilla extract
• 3 ¼ cups all-purpose flour
• 1 tablespoon baking powder
• 1 tsp kosher salt
• 1 cup almonds roughly chopped
• 1 cup craisins
• zest from 1 large or 2 small oranges
• ½ tsp orange extract
Directions
1. Preheat the oven to 375 degrees F.
2. Line cookie sheet with parchment paper.
3. Combine sugar, oil, eggs, vanilla extract, orange extract, and orange zest in a large bowl and mix until well-blended.
4. Combine flour, baking powder, and salt in a separate bowl and add to egg mixture.
5. The dough will be heavy. Mix until well combined. If necessary, use your hands to combine thoroughly.
6. Add almonds and craisins and mix into the dough.
7. Divide dough into two equal pieces. Place sheet of parchment paper on sheet pan. Form each piece into a log the length of your cookie sheet and approximately ½ inch thick.
8. Bake 25 to 30 minutes until golden brown. Carefully transfer logs to wire racks until cool enough to handle.
9. Lower oven temperature to 350 degrees F.
10. Slice each log crosswise into roughly ½ inch slices. Place slices back on the cookie sheet.
11. Bake an additional 20-30 minutes until lightly toasted.
12. Allow to cool and store in airtight container or freeze.

Recipe Ingredients:
All-purpose Flour - 2 cups (260g)
Baking powder - 1 and 1/2 tsp
Salt - 1/4 tsp
Unsalted butter - 1/3 cup (75g)
Granulated sugar - 3/4 cups (150g)
Eggs (large) - 2 whole plus 1 egg yolk
Egg white - of 1 egg
Zest of 1 Navel orange
Raw unsalted Pistachio - 1 cup (145g)
Dried Cranberries - 1/2 cup
White coating chocolate - about 1/2 cup

Cherry and Pecan Biscotti:
Ingredients:
1 cup flour
1/4 cup oats
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp baking soda
1 egg
3 Tbsp oil
1 Tbsp vanilla essence
1/2 cup roasted pecans
1/2 cup cherries
Directions:
In a bowl combine the flour, sugar, oats, baking soda, baking powder and salt.
In a bowl combine the egg, oil and vanilla essence.
Add the wet ingredients to the dry ingredients and mix to combine.
Add the pecas and the cherries and fold that in.
Place dough onto a lined baking tray, flour hand and shape dough into a long flat long.
Bake at 180 degrees celsius for 30 minutes, roatating the pan halfway.
Allow to cool for 10 minutes.
Cut into strips, cut strips into half.
Place back onto a lined baking tray and bake at 160 degrees celsius for 40 minutes, flipping the biscotti over half way through.
Allow to cool completely.
