How To make Drunken Beans
7 ounces bacon
diced
1 large onion :
diced
2 cloves garlic minced
2 cups pinto beans :
soaked and drained
1 quart chicken stock or water
2 cups beer
4 jalapeno chiles (with seeds) thinly sliced
salt :
to taste freshly ground black pepper to taste 2 tablespoons cilantro :
chopped
In a large saucepan, saute the bacon over medium heat until the fat is rendered. Remove the bacon with a slotted spoon and set aside. Pour off all but 1 tablespoon of fat and add the onion and garlic. Cook for 2 to 3 minutes, until the onion is translucent. Add the beans, stock or water, and beer. Bring to a boil, reduce the heat to a simmer, and cook for about 1 hour, checking every 30 minutes or so. Add the jalapenos after the first 30 minutes of cooking, and add more broth or water as needed to keep the beans covered. When the beans are tender, season with salt and pepper. Stir in the cilantro, and serve.
Notes: Chef Stephan Pyles included this recipe in his cookbook __The New Texas Cuisine__, Doubleday, 1993, ($35.). He suggests serving Drunken Beans with Jalapeno-Stuffed Smoked Dove, Three Potato Salad and Rosy Relish, all included in his cookbook.

Borracho Beans (Frijoles Borrachos)
Tender and creamy Borracho Beans (or Frijoles Borrachos) are an easy Mexican dish made from pinto beans simmered in a beer broth with bacon, onions, tomatoes and spices. Serve with a side of cornbread or flour tortillas for the perfect Tex-Mex dinner!

BORRACHO BEANS: How to Make Delicious Drunken Beans/Frijoles Borrachos with Hatch Green Chile
If you've never had Borracho Beans before, you've been missing out because they're absolutely delicious. It's amazing how one bottle of beer can enhance the flavors that are packed into these Drunken Beans/Frijoles Borrachos. Among those flavors is Hatch green chile! Need I say more?! Read on for the recipe.
Borracho Beans
1 lb. pinto beans (sorted, cleaned, soaked in water overnight & drained)
6 cups of water
4 slices of bacon, cut into half inch pieces
4 roma tomatoes, cubed
5 Hatch green chiles (roasted, peeled & diced)
2 cloves of garlic, minced
1 medium onion, chopped
1 bottle of Mexican beer
salt to taste
Heat a large pot on the stovetop at medium high heat, then fry the bacon in the pot. Once cooked, remove the bacon and set aside, but leave the bacon grease in the pot. Drop in chopped onions, tomatoes, and chile and let it fry in the bacon grease, while stirring. Once onions are translucent and tomatoes have cooked down, add in minced garlic and cooked bacon. Then add in drained pinto beans, along with 6 cups water and 1 bottle of beer. Stir to combine and let it come to a boil. Once it boils, lower the heat and let beans cook for 2 hours. In the last half hour of cooking time, add in salt to taste.
The alcohol from the beer will cook out, but what the beer does is enhance all the flavors of the other ingredients. You'll be left with creamy, smoky, flavor-packed Borracho Beans.

Instant Pot Borracho Beans ( Drunken Beans) Easiest Recipe by Chef Sapo
These are the best Borracho Beans ( Drunken Beans) you will ever eat. A must Try recipe!!!!
I varied off this recipe. I forgot to show adding a bit of water after the beer. Just about a cup.
This is where I got the recipe:
Ingredients:
• 6 slices bacon cut into 1-inch strips
• 1/2 medium yellow onion finely chopped
• 3 serrano chiles finely chopped
• 2 cloves garlic minced
• 1 lb dried pinto beans
• 6 - 8 sprigs cilantro
• 12 oz Mexican beer 1 bottle
• 1 1/2 - 2 tsp coarse salt
Instructions:
1. Set the Instant Pot to Sauté and adjust to More or High. Fry the bacon in the pot for 4 to 6 minutes, or until cooked through.
2.Stir in the onion, chiles, and garlic. Sauté for an additional 2 to 3 minutes, or until the onion is translucent.
3.Add the beans, cilantro, beer, and enough water to reach the two-thirds-full mark inside the Instant Pot
4.Lock the lid into place and set the steam release valve to sealed. Select 5.Manual and set the timer for 60 minutes on high.
When cooking is complete, allow the pressure to release naturally. Unlock and remove the lid.
6.Season the beans with the coarse salt, ladle into bowls, and serve.
