Ingredients

ground beef

onion, chopped

cream of mushroom soup

cn
ro-tel tomatoes & chilies

corn tortillas

oz
cheddar cheese, grated
1
salt, to taste

pepper, to taste
Directions:
Brown ground beef and onion; drain off grease. Set aside. Mix mushroom
soup and tomatoes in blender. Add to ground beef. In a greased 9x13 inch
casserole dish, layer 5 to 6 tortillas, torn into bite size pieces, half
the ground beef mixture and 1/2 the grated cheese. Repeat layers; ending
with cheese. Bake at 350 degrees for 30 minutes.

Soft tortillas filled with a juicy and succulent chicken filling, plenty of cheesy goodness, and a flavor-packed red enchilada sauce. I love to top my enchiladas with slices of avocado, sour cream, and cilantro, it’s the perfect comforting family meal and I don’t know anyone who doesn’t love this recipe.

Skim the top of the beef gravy to remove the excess oil
Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

Enchilada Casserole:
1 pound ground beef, chicken or turkey
1/2 onion chopped fine
1 can chili beans (or black beans rinsed) 16 ounce
1 Tbsp chili powder
1 Tbsp cumin
1 Tbsp paprika
10 corn tortillas
8 oz cheddar cheese, shredded
8 oz Monterey jack cheese, shredded (or pepper jack)
2 can(s) red enchilada sauce, 10 oz each (note that you may not need all of second can)
