Chocolate Banana Cream Pie

Ingredients
For the crust:
2 cups graham cracker crumbs (10 to 12 crackers)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted
For the chocolate filling:
3/4 cup sugar
5 extra-large egg yolks
1/3 cup cornstarch
1 teaspoon kosher salt
4 cups whole milk, scalded
7 ounces bittersweet chocolate, chopped
2 tablespoons unsalted butter, diced
1 tablespoon coffee liqueur
1 teaspoon instant coffee powder
For the decoration:
2 large bananas, sliced
1 cup cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract
Milk chocolate, for garnish
Directions
Preheat the oven to 350 degrees.
For the crust, combine the graham cracker crumbs, sugar and butter in a bowl. Press the mixture into an 11-inch false-bottom tart pan, making sure the sides and the bottom of the crust are an even thickness. Bake for 10 minutes and set aside to cool completely.
In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, egg yolks, cornstarch and salt. With the mixer on low, slowly add the scalded milk until the mixture is combined.
Pour the mixture into a large saucepan and cook over medium-low heat for about 5 minutes, stirring constantly with a wooden spoon, until the mixture is very thick. Off the heat, add the chocolate, butter, coffee liqueur and coffee powder and stir until the chocolate is melted. Pour the filling into the cooled tart pan and smooth the top. Place plastic wrap directly on top of the chocolate filling and chill for 6 hours.
When ready to serve, remove the plastic wrap from the chocolate and arrange the banana slices in concentric circles on top of the filling.
Place the heavy cream, sugar and vanilla in the bowl of an electric mixer fitted with the whisk attachment and beat until the cream forms firm peaks. Spoon the whipped cream on top of the bananas and gently spread the cream with a spatula to cover the pie, leaving a border of bananas visible at the outside edge. For a garnish, shave curls of milk chocolate on top of the whipped cream.
Remove the pie from the pan, place it on a cake plate and serve.

Making Banana Pudding Pie from scratch is super easy and this recipe makes a luscious banana cream pie with rich vanilla pudding, banana slices in every bite and the perfect crunchy, buttery graham cracker crust. This dreamy dessert is completely from scratch and you'll love how quickly it comes together with simple ingredients you'll already have. I promise you, not only is this simple to make, it's also incredibly delicious and your family will feel all the love you've put into this delicious, creamy pie with every bite!
Graham Cracker Crust Ingredients
1 1/2 cup graham cracker crumbs (about 10 - 12 graham crackers)
1/4 cup sugar
6 tablespoons butter (if using unsalted, add 1/2 tsp salt here)
Banana Pudding Pie From Scratch Ingredients
4 large ripe - but firm - bananas
1/2 cup sugar
1/4 cup cornstarch
3 egg yolks
2 eggs
3 cups whole milk
3 teaspoons vanilla extract
2 tablespoons of butter
Whipped Cream Ingredients
2 cups heavy cream
1/4 cup powdered sugar
Banana Pudding Pie From Scratch Directions
To make the graham cracker crust, begin by preheating the oven to 350 degrees. Melt the 6 tablespoons of butter, add 1 1/2 cups graham cracker crumbs, 1/4 cup of sugar, and 1/2 teaspoon cinnamon. Mix this all together , and press firmly into a 9 inch pie dish. Bake for about 12 minutes until golden, then cool completely before filling, this will take about 30 minutes.
For the banana cream pie filling, slice 4 ripe but firm bananas into 1/4 inch slices. In a saucepan, whisk together 1/2 cup of sugar and 1/4 cup of cornstarch. Add 3 egg yolks and 2 eggs, and whisk vigorously until the mixture is smooth, making sure to get along the sides of the pan. Mix in 3 cups of whole milk and 3 teaspoons of vanilla extract. Cook this over medium heat for about ten minutes, whisking often, until it begins to simmer and you see gentle bubbles along the sides and the pudding begins to thicken. Reduce the heat, and continue to simmer for about 3 minutes, whisking the entire time. Then remove from heat and let this cool for about 5 minutes.
Add 2 tablespoons of butter, and whisk it into the pudding until it's completely melted. Add the sliced bananas, gently folding them into the pudding.
Pour the pudding into the cooled crust, smoothing it evenly to the sides. Chill this pie for at least 6 - 8 hours or overnight.
To make fresh whipped cream, beat 2 cups of heavy cream with 1/4 cup powdered sugar, until soft peaks form. Top the pie with whipped cream and serve.

GRAHAM CRACKER CRUST
1-1/2 cups Graham Crackers Crumbs
1/4 cup sugar
1/8 teaspoon salt
6 Tablespoons butter, unsalted, melted
1. With a fork... combine graham cracker crumbs, sugar, and salt. Add melted butter. Stir with fork until all the graham cracker crumbs are coated with butter.
2. Add graham cracker mixture to a 9-inch pie pan. Press graham cracker crumbs firmly up the sides and bottom of pie pan.
3. Bake in a 375 degrees oven for 10 minutes. Cool completely on cooling rack, before adding pie filling (about 1 hour).
BANANA PIE FILLING
3-6 medium size bananas
2 cups heavy cream
2 tablespoons sugar
1 teaspoon vanilla extract
1 (3.4) oz box instant vanilla pudding
1 cup whole milk, chilled
1 (8 oz.) package cream cheese
1 (14.oz) sweetened condensed milk
1/2 cup toasted coconut, optional
1. Add heavy cream, sugar, and vanilla into a mixing bowl. With a hand beater or whisk...beat until soft peaks form. Cover and refrigerate until ready to use.
2. In a small bowl whisk together vanilla pudding and chilled milk. Set aside.
3. In a large mixing bowl add cream cheese and sweetened condensed milk. With an electric mixer, beat of high-speed, until mixture is light & smooth. Add pudding mixture and beat for 1 additional minute. Fold in 1/2 of the prepare whipped cream mixture making sure all ingredients are well blended.
4. Peel and slice bananas. Banana slices will be 1/4 to 1/2-inch in thickness. Arrange banana, in one layer, on side and bottom of prepared graham cracker crust.
5. Add cream cheese filling on top of banana slices making sure each banana slice is cover with pie filling mixture.
6. Add the additional whipped cream to the top of pie.
7. Cover pie with plastic wrap and refrigerate up to 2 hours or over night.
8. Serve with a garnish of sliced banana, and toasted coconut. optional.
TIPS: Pie will keep in refrigerator, covered, up to 3 days.
