How To make Easy Swiss Steak
Servings: 6
1 To 2 pounds bottom round or
-chuck steak (thin cut, -approx 1/2 thick) 1 cn DelMonte Stewed Tomatoes
-MEXICAN STYLE 1/2 cn Campbell's Beef Bouillon
Seasoned flour Optional: approx 1 lb carrots, sliced and added with the other ingredients.
Cut steak into serving sized pieces. Remove all visible fat. Dredge in seasoned flour. (most recipes call for pounding the flour into the beef, this is REALLY optional, 'cause I've skipped it, and couldn't tell the difference)
Spray cast iron skillet with cooking spray, heat to medium high. brown steak pieces well. Add tomatoes and 1/2 can bouillon. Cover tightly and simmer over low heat until steak is fork tender. (1 1/2 to 2 hours.)
Serve with mashed potatoes.

Oven Swiss Steak
Swiss Steak is made from round steak and served in a gravy with mushrooms. It's often made with a tomato base, but this version uses a beef broth base instead.

Ingredients
1 1/2 pound beef round steak 3/4-inch thick
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil divided
1/2 cup sliced onion
1 cup sliced mushrooms
1 3/4 cup beef broth divided
10 ounce can Golden Mushroom soup
Instructions
Preheat oven to 350 degrees F.
Pound meat with a meat mallet on both sides, just enough to tenderize. Mix salt and pepper with the flour. Dredge meat in flour mixture.
Heat olive oil in a large oven-safe skillet and brown meat on both sides. Remove meat to a plate and cover to keep warm.
Add another tablespoon of olive oil to the skillet and saute onions and mushrooms until tender and lightly browned.
Add 1/2 cup of the broth to the pan to deglaze any bits off the bottom.
In a separate bowl, whisk together soup and remaining broth. Strain out the mushrooms that come in the soup and discard. Add broth/soup mixture to the skillet and bring to a boil.
Add the meat back to the skillet, turning to coat. Nestle the meat beneath the gravy mixture.
Bake, covered, for 2 hours.
Notes
To make this dish in the crockpot, simply follow all of the instructions then add everything to the slow cooker and cook on low 6 hours.
Straining the mushrooms out of the golden mushroom soup. This step is helpful when you have mushroom hating family members, it makes it easier to eliminate the possibility of mushrooms hitting their plate.
If you do not have a cast iron or oven-safe skillet, simply transfer everything to a casserole dish for baking.

This vintage recipe is a must-try! The sauce has so much flavor!
RECIPE:
INGREDIENTS:
2.5 lbs. round steaks or bottom or top round roast cut into thick steaks (2-4 pounds will work fine in this recipe)
½ cup flour
1 tsp. salt
¼ tsp. black pepper
4 Tbsp. cooking oil
10.5 oz. Campbell's beef consomme or beef broth
29 oz. petite diced tomatoes (two 14.5 oz. cans) do not drain
2 Tbsp. Worcestershire sauce
1 cup diced onion
1 green bell pepper
2 garlic cloves, minced
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
On a large plate add the flour and salt and pepper. Mix this together with a clean hand.
Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add the slow cooker with the meat later.
Set a large skillet to medium-high heat. Add the oil when the pan is hot. Brown the steaks on both sides, no need to cook through. You may need to cook the meat in batches if you pan is too small, add more oil for the second batch.
Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
Deglaze the pan that you browned the meat in with by adding the beef consomme and scraping up any brown bits. Add to the slow cooker on top of the beef.
Add the remaining ingredients, stir.
Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours without opening the lid during the cooking time.
