Strata is a savory, layered breakfast casserole made with bread, eggs, meat and vegetables. Make it the day before and bake it in the morning!

???? Extra virgin olive oil (I used Early Harvest Greek EVOO)
???? 2 teaspoons olive oil, plus more for greasing the baking dish
???? 3 cups chopped spinach, packed
???? 4 cloves garlic, minced
???? 1 pound about 6 cups crusty bread, cut into large cubes
???? 4 ounces chevre cheese
???? 1 cup shredded parmesan cheese
???? 3 large roasted red peppers, chopped (about 1 cup)
???? 3 ounces prosciutto, torn to bite-size pieces
???? 4 scallions or chives, chopped
???? 8 eggs
???? 3 cups whole milk
???? 1 teaspoon Italian seasoning
???? 1 teaspoon kosher salt

EASY Italian Overnight Strata
EASY Overnight STRATA is the easiest dish to prepare. It can be made the DAY BEFORE and popped in the oven in the morning. Guests will LOVE as it comes out of the oven hot and with NO FUSS on your part. PERFECT with the HOLIDAYS and having sleepover GUESTS. You are going to love how EASY this dish is and how much TIME YOU WILL SAVE. Plus this a great way to add any LEFTOVERS to your STRATA.
EASY Italian Overnight Strata
Serves 4
4 Eggs
¼ cup Ricotta
1 Cup Milk
6 oz Day Old Bread, cubed
½ lb Italian Sausage, Cooked
1 Bell Pepper, Diced
1 Scallion, thinly sliced
2 oz Sharp Cheddar Cheese, grated
2 oz Mozzarella, grated
2 Tablespoons Parmesan Cheese, grated
1 Tablespoon Parsley, chopped
1 teaspoon Salt
½ teaspoon Pepper
1. Grease an 8 x 8 pan and set aside.
2. In a large bowl, add Milk, Ricotta, and Milk. Whisk until fully combined.
3. Add the remaining ingredients and mix until all are evenly coated.
4. Place all the egg mixture into the 8 x 8 pan.
5. Cover with plastic wrap and place in the refrigerator for at least 6 hours or overnight preferred.
6. When ready to bake, remove from the fridge so that the strata can come to room temp. Also preheat the oven to 350 degrees.
7. Once the oven is preheated, place strata in the oven covered with foil and cook for 20-25 minutes.
8. Uncover and continue to cook for another 20-25 minutes. (Optional to add additional grated cheese on top)
9. Allow the strata to cool out of the oven for 10 minutes before serving.

SAUSAGE, GREEN CHILE AND CHEESE BREAKFAST CASSEROLE: Easy Recipe Using Canned Biscuit Dough
This Breakfast Casserole with Sausage, Green Chile and Cheese is perfect for Christmas morning. It's an easy recipe that uses canned biscuit dough, and it's enough to feed a large family. You can also customize it to include your personal preferences. Read on for the recipe.
Sausage, Green Chile & Cheese Breakfast Casserole
1 dozen eggs
1 can biscuit dough
1 lb. ground sausage
1/2 - 3/4 cup chopped green chile
1 1/2 cups grated cheddar cheese
1/2 cup milk
salt and pepper to taste (plus any seasonings you like)
Cook sausage over stove in a large skillet and set aside. Grease a large (approx. 13 x 9) casserole dish. Cut canned biscuits into quarters and place pieces of dough on bottom of dish. Spoon layer of cooked sausage on top.
Sprinkle with chopped green chile. Cover everything with grated cheese.
In large mixing bowl, crack open eggs. Add milk, salt, pepper, and other seasonings, such as garlic salt. Whisk together. Pour egg mixture over everything in casserole dish and bake at 350º for 30 minutes. Enjoy!

12 EGGS
1 CUP HEAVY CREAM OR HALF AND HALF
1 LB PORK BREAKFAST SAUSAGE (SWAGGERTY’S FARM SAUSAGE USED)
16 OZ. SHREDDED CHEDDAR CHEESE (OR OTHER CHEESE CAN BE USED)
1 SMALL CAN OF MUSHROOMS (OPTIONAL)
1/2 LARGE ONION CHOPPED
1 GREEN PEPPER CHOPPED
SALT AND PEPPER
2 TBSP. MARGARINE OR BUTTER
Grease a 9” x 13”-inch pan. Break eggs into pan and poke each yolk (or lightly scramble). Pour
cream over eggs. Add half of grated cheese. Brown sausage and drain. Add onions and
mushrooms to sausage and cook with margarine or butter. Place sausage mixture over eggs evenly and cover with remaining cheese. Bake at 350 degrees for 45-60 minutes.
