BBQ Baingan Bharta in English
Ingredients:
- Aubergine/Bringal round 1/2 kg
- Oil ½ cup
- Onion sliced 1 ½ cup
- Tomato chopped 1-2 medium
- Salt 1 ½ tsp OR to taste
- Red Chili Powder 2 tsp or to taste
- Turmeric ½ tsp
- Cumin Seeds 1 tsp
- Green Chilies 4-6
- Coriander ¼ cup
- Ginger garlic paste 2 tsp
Directions:
- Place the washed and dried aubergine directly on flame so and keep turning so the outer layer gets burnt.
- Once done remove the burnt layer carefully and then mashed the pulp with fork. Set aside.
- In a pan add oil and when hot add cumin seeds. After a while add onions, GGP & 2 green chilies and when changes the color to light gold add tomato.
- Mix well and when is about to dry, then adding all spices (salt, chili powder & turmeric) and then add mashed pulp of aubergine. Mix well so all masalas/spices infused in pulp
- Once mixed well and oil leaves the corner add remaining green chilies (whole or chopped is choice) and coriander and simmer for 2-3 mins.
- Serve Hot.

Ingredients:
- Gol Baigan (big one) 500 gms/1/2 kg
- Tel ½ cup
- Piyaz sliced 1 ½ cup
- Tamatar chopped 1 medium
- Namak 1 ½ tsp OR to taste
- Lal Mirch 2 tsp or to taste
- Haldi ½ tsp
- Zeera 1 tsp
- Hari Mirch 4-6
- Taza Dhania ¼ cup
- Adrak Lehsan paste 2 tsp
Directions:
- Dhulay aur khushk baigan ko stove ki aanch pe rakh ke senk lein. Yahan tak uska chhilka jal jaye.
- Uske baad uska chhilka nikal dein and baigan ko kaante ki madad se mash karlain aur alag rakh dein.
- Ab ek pan main oil shamil karein is main zeera daal ke kar karaye phir piyaz, ggp aur 2 hari mirch daal ke piyaz ka rang halka sunhera hone tak pakaye. Is main tamatar shamil karein.
- Jab bilkul halka pani reh jaye to is main masalay shamil karein aur phir baigan shamil karke achi tarah mix karein.
- Jab tel kinare chhor dein to ismain baqi hari mirch aur taza dhania shamil kar ke 2-3 min ke liye dump e rakh dein.
- Garam serve karein.

Baingan ka Bharta (Smoky Eggplant Curry)
This curry is one of my all time favourites. Believe it or not, I wasn't a big eggplant fan growing up, but somehow my mom was able to convince me with this one.
It is creamy, smokey, and tangy with just the right amount of heat. Pair it with some hot Rotis/Chapathis/Naan and you're good to go :D

INGREDIENTS
2 Large Eggplants, cut lengthwise down the middle
2 tbsp, Canola Oil
2 tbsp, Ghee
1 large Onion, finely chopped
1/2 tbsp, Garam Masala
1 tsp, Cayenne Chilli Powder
1 tsp, Coriander Powder
4 cloves Garlic, finely chopped
2 inches Ginger, finely chopped
3 large Tomatoes, chopped
Salt to taste
Fresh chopped Coriander to garnish
METHOD
Place Eggplant flesh side down on a lined baking tray. Place under broiler and cook until charred and flesh has softened.
Remove from broiler, and scoop out flesh with a spoon onto a cutting board. Roughly chop and transfer to a bowl.
Heat Canola Oil and Ghee on medium-high heat. Add Onions and cook until softened and slightly golden. Add Garam Masala, Chilli and Coriander Powders and sauté for 15 seconds or until fragrant. Add Garlic and Ginger, and sauté for an additional 15 seconds until softened and fragrant.
Add Tomatoes, and cook for 10-15 minutes until they have completely softened, and their raw flavour has cooked out. The tomatoes should be saucy and take on a deeper burnt orange colour, with the fat of the ghee and oil rising to the surface.
Then add Eggplant and salt to taste. Cook for an additional 5 minutes.
Remove from heat and garnish with fresh chopped Coriander. Serve alongside hot chapatis. enjoy! :)

Chopped onion-2(medium)
Chopped tomato-1(large)
Chopped green chilli-2
Ginger garlic(grated/paste)-1 tsp
Chopped coriander leaves-1/3 cup
Asafoetida(hing)-1/4 tsp(optional)
Cumin seeds-1/2 tsp
Turmeric powder-1/3 tsp
Red chilli powder-1/3 tsp
Cumin powder-1/3 tsp
Coriander powder-1/3 tsp
Garam masala powder-1/2 tsp
Salt to taste
Cooking oil-4 tbsp

Full written recipe for Baingan ka bharta
Ingredients:
• Eggplants/brinjal 3 medium size
• Garlic 10-12 cloves
• Green chillies 2-3 nos.
• Mustard oil 1 tbsp
• Oil 1 tbsp
• Ginger 1 tbsp (chopped)
• Onions 2-3 medium size (chopped)
• Tomatoes 2-3 medium size (chopped)
• Salt to taste
• Green peas (hare matar) 3/4th cup
• Powdered spices:
1. Turmeric powder a pinch
2. Red chilli powder 1 tbsp
3. Coriander powder 1 tbsp
• Fresh coriander leaves 1 tbsp (chopped)
Methods:
• Make incisions on the on the eggplant with a small knife and stuff in the cavity with garlic and green chillies. Apply mustard oil all over the eggplant.
• Now, Roast the eggplant over an open flame keeping the flame low, char them until they are soft, turn and flip the sides in regular interval.
• Now, carefully remove the skin, and roughly chop the roasted eggplants along with green chillies and garlic cloves.
• Now, set a pan on medium heat, add oil and chopped ginger, lightly cook the ginger for 1-2 minutes, further add onions, and cook them on medium high flame until they start to get some colour.
• Now, add tomatoes and salt to taste, cook the tomatoes until they are mushy.
• Further, add green peas and powdered spices, stir and cook for 3-4 minutes on medium flame.
• Now add, the cooked & chopped eggplant, stir well and cook on medium flame for 3-4 minutes, baingan ka bharta is done, you can eat it at this stage as well, but I prefer to cook for few more minutes for that distinct flavour.
• Cover and cook for 10 minutes, do stir in regular intervals.
• Baingan ka bharta is ready, check for the seasoning and finish it with some freshly chopped coriander leaves. Serve hot with roti or paratha of your choice.
