How To make Eggplant w/ Chopped Pork
PORK MIXTURE:
1/2 lb Ground pork
3 tb Dark soy
1 tb Sesame oil
4 Scallions; chopped
CAN BE PLACED TOGETHER:
1 tb Sugar
1 1/2 ts Salt
CAN BE PLACED TOGETHER:
5 Garlic cloves; diced
1 sl Ginger; diced
OTHER INGREDIENTS:
2 md Eggplant, approx 1/2 lb each
- peeled; cut in 1" cubes Chilli paste, 1-2 tb 4 Scallions; chopped
2/3 c Water
5 tb Oil; for stir frying
Comment: An excellent Szechwan dish with just the right spice! Preparation: - Heat Wok - Add oil and let heat - Add garlic & ginger; stir fry [30] Sec. - Add chilli paste; stir fry [30] Sec. - Add "pork mixture"; stir fry [2] Min.; break up clumps of meat Insure all meat is exposed to oil - Add eggplant; stir fry [4] Min.; gently scoop pieces of eggplant off sides of Wok and into middle - Sprinkle salt & sugar over ingredients; stir fry [2] Min. - Pour in water and add scallions - When water boils; Cover and cook over High flame [10] Min. until eggplant has become soft and absorbed meat flavor - Serve!

Chinese eggplant with minced pork!! ????
Ingredients:
- Chinese eggplant 3-4
- Corn oil
- Ground pork 1lb
- Green onions 2 stalks
- Garlic 5 cloves
- Ginger (minced)
- Light soy sauce (5 tbsp)
- Dark soy sauce (1 tbsp)
- Oyster sauce (1 tbsp)
- Chinese chili bean paste (douban jang) (1 tbsp)
- Black Rice Vinegar (1 tbsp)
- Brown sugar (2 tsp)
- Corn starch slurry (1 tbsp corn starch + 1 tbsp water)
- Water 1 cup
Instructions:
- Cut eggplants into quarters, length wise
- Shallow fry for 1 min on each side and place on paper towel to absorb excess oils
- In the same pan, sautéed minced ginger, garlic and white ends of the green onions until fragrant
- Add in ground pork and sauté
- Add in the chili bean paste, light soy, dark soy, black rice vinegar, brown sugar, oyster sauce and water
- Mix thoroughly and simmer for a 1
- Add in a corn starch slurry and mix to thicken up the sauce
- Add in your eggplants and gently mix
- Lastly, serve and garnish with green onions
- Enjoy!

Hello everyone! Today I will share with you guys a delicious dish of eggplant. The minced meat and eggplant produced in this way are very delicious and not greasy. The eggplant does not absorb much of the oil and does not turn black. It is too fragrant. Let try it someday!
Ingredients
- 150g minced pork
- 1tbsp corn starch
- ½tbsp salt
- cooking oil
- some green onion
▶ For soak eggplants
- 3or4 eggplants (medium side)
- 1L water
- 1tbsp white vinegar
▶ Make sauce
- garlic
- ginger
- chili
- ¼tsp salt
- 1tsp sugar
- 1tbsp soy sauce
- 1tbsp balsamic vinegar or black vinegar
- 50ml water

INGREDIENTS:
3 Chinese eggplants
2-3 sprigs green onions
1 lb ground pork
3 tbsp cooking oil, divided
1 tsp grated ginger
3 cloves minced garlic
1 cup water
Cornstarch slurry (1 tsp cornstarch and 1 tbsp water)
Sauce:
1 tbsp sugar
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp sesame oil
3 tbsp oyster sauce
1 tbsp chili garlic sauce
Directions:
1.) Wash eggplant and cut ends off. Then cut into 2 inch pieces and then cut those pieces into strips. Soak in salted water to prevent discoloration.
2.) Chop green onions and set aside. Mix the sauce ingredients together in a bowl and set aside.
3.) Place a large pan on medium heat, add 1 tbsp cooking oil and cook eggplant, skin side down first. After 2-3 min, flip them over and cook for another 2-3 minutes. Remove eggplant from pan.
4.) In the same pan, brown ground pork with 1 tbsp of cooking oil for 5 min or until thoroughly cooked. Remove pork from pan and drain excess grease.
5.) Next, sauté grated ginger and minced garlic in 1 tbsp of cooking oil for 1 min or until fragrant. Then add the pork, eggplant, sauce mixture, water, and cornstarch slurry. Continue to cook on medium heat for 5-8 min or until eggplant is thoroughly cooked. The sauce will also begin to thicken.
6.) Garnish with green onions and serve with hot rice. Enjoy!
